View Full Version : Cover Recipe Challenge

Wanting to jump on the bandwagon but being a new mommy and thus knowing my limitations, I've created my own challenge: I'm going to make every single cover recipe from this year's Cooking Light Magazines. Before you all start calling me a weanie in comparision to all the other more elaborate goals, let me point out that this challenge has the element of surprise. I don't know that CL won't feature a liver or canteloupe recipe this year. So there.

So far I'm off to a good start having made the chili and stuffed shells. Plus, the salmon is on the menu for later this week. I had my mom make the strawberry tart for Easter so I've eaten that. However, to play fair, I will make it sometime this year!

Does anyone want to join me?

Sounds cool. I may join you . . . . All the stuff on the covers has looked amazing, and your project sounds reasonable to me!

Sounds like a great challenge! Think I'll get out all the issues before I jump in on this one unless of course I don't have to actually eat them!! :p Seriously, my diet is very strict right now (eat tons but it has to be th right stuff) so would it work if I got DH and DSs to eat the stuff?

And if it makes you feel better, *I* think it sounds very ambitious. My lame-o goal is just to make ANY ONE recipe from the CL before the new one arrives.

(In my own defense thou, no never mind, there's no excuse)

:D I think that's a wonderful challenge! I think doing anything that you might not normally tackle is a good challenge... so keep us posted along the way!!

Okay, so I'm wanting to join in on some sort of challenge, but I know that as a full-time student with a full-time job who is moving into a new house within the next 6 weeks, I can't undertake anything massive. Darn!

So I just busted out all my CL's from this year, and they are totally do-able. Geez.. I'll be so sad to have to make the tart from last month's cover.

Just last night I made the Maple-Glazed Salmon, so I'm off to a good start (on May at least!!). The Stuffed Shells from March are on the menu sometime this week, and tonight at the mall I'm going to get a tart pan for the Strawberry Tart from last month. :) This is so much fun!!

I'm so glad you're joining me on this challenge for the time-challenged! I'm so sad about having to make the tart, too. Such a shame to have to cook such horrible things...

So I still didn't get the stuffed shells done, but I'm making the Strawberry Tart for my birthday celebration with the relatives this weekend...


BUT MORE IMPORTANTLY, what's on the June CL cover, so I know what I have to make?????

On the June cover: The Guadalajara Burger. It has a salsa made with avocado on it.

Oh yum, could you share? I just threw a ripened avocado in the fridge and need to use it up. I plan on barbecuing on Monday, possible Sunday night, so this could be ideal.

1 teaspoon chipotle chili powder
1/2 teaspoon kosher salt
1 pound ground round
cooking spray
4 (2-ounce) Kaiser rolls
1 1/3 cups Tequila Spiked Salsa

Prepare grill.

Combine chile powder, salt, and beef. Divide the mixture into 4 equal portions, shaping each portion into a 1/2-inch-thick patty.

Place patties on a grill rack coated with cooking spray; grill 5 minutes on each side or until done. Pace rolls, cut sides down, on grill rack; grill 1 minute or until toasted. Place 1 patty on bottom half of each roll; top each serving with 1/3 cup Tequila-Spiked Salsa and top half of roll. Yield: 4 servings

Tequila Spiked Salsa

2 cups chopped seeded tomato
1 cup chopped onion
1/2 cup chopped fresh cilantro
1/3 cup chopped peeled avocado
2 tablespoons fresh lime juice
2 teaspoons tequila
1/2 teaspoon kosher salt
2 cloves garlic -- minced

Combine all ingredients in a bowl, tossing gently. Yield: 3 cups (serving size: 1/3 cup).

Yield:
"3 cups"

It is good to see that people are getting into the spirit of this exciting challenge! The burger looks good. I plan to make it this weekend along with the fries pictured so as to be completely in sync with the cover recipe.

I may as well post my other cover recipe reviews here even though there are other threads addressing these dishes.

January/February All American Chili: I thought this was pretty good, although I have another chili recipe I enjoy more. I would have liked it better without the wine but didn't realize that until it was added and thus, too late. It did improve with age. It freezes well.

March Stuffed Shells: I never would have made this except DH pointed to the cover and said, "how come you never make anything like that?" Well, I had to point out to him that the green stuff in the picture was spinach. He said it would be okay as it didn't look like too much spinach. Sensing an opening I made the shells. They were a hit! I did not make the sauce due to time constraints, but will make them again, this time making the sauce. (I used a bottled sauce as suggested on the bulletin board.) I ended up giving the frozen casserole to a friend and she said it was the best pasta dish she had ever had. Wow! I didn't think it was that good. I have since been able to add cooked spinach as an ingredient to other dishes and this is the ultimate success of this recipe.

April Strawberry Tart: I have not made this yet, but had the one my mom made for Easter. I will reserve my review until making it myself.

May Grilled Salmon: Salmon is just about my favorite food and I am always looking for new ways to serve it. We used to have it about once a week until DH complained he was growing gills. Fish is not his favorite. But we both loved this simple, tasty preparation. This recipe also inspired me to visit the beautiful Penzey's store here in Houston to get the Ancho chili powder. You bulletin board people have introduced me to a gem!

I'm looking forward to more tasty cover recipes!

Here is a long overdue update. I have been making all the cover recipes, just not posting reviews! So my goal is to post one review a week until I am caught up.

I'll start with April's strawberry tart. This was reviewed at length on an individual thread. I made it myself for my book club. Not owning a tart form, I just used a fancy fluted heart-shaped ceramic pan. This recipe is very easy to put together and the presentation was beautiful. It was a tad difficult to remove from the pan, so I can see where the tart form would be useful. Because it was difficult to remove, the pieces weren't very pretty on the plates. Good thing I had shown it to everyone first and got the proper oohs and aahs. The tart tastes delicious. The only changes I made were to substitute light graham crackers because that's what I had. I added a little extra butter to make up for the missing fat! It's a great spring dessert. Next time I'll buy a tart form and do it "correctly".

As a new feature, I am listing in the cover recipes in order of my favorite to least favorite. Look for updates each week! Justifications of ordering to occur after all cover recipes completed. Ordering subject to change...
