Stir Fried Chicken and Broccoli with Black Bean Sauce

I'm not sure why I waited so long on this one...it was really very very good and another great thigh recipe. :D


Dilled Turkey Meatballs with Vegetable Sauce

Very good and a definite repeat for ease, tastiness and good nutritional value. The meatballs were wonderfully flavored and the vegetable sauce was nice and light. Delicious

Cranberry Rice Pilaf

Very good. I even had leftovers on its own as a lunch and it was quite tasty...A great way to dress up brown rice :D

DH loved it and it was a tad too sweet for me. Next time I think I would reduce the orange marmalade as the small amount was still quite pronounced. I loved the added chili sauce though...it was a great flavor combo.

Ahh...the quest for the perfect tiramisu. DH says this one is a close second but his all time favorite is still the anacapri with white chocolate as the pudding base.

Cashew-Crusted Chicken on Basil-Pineapple Rice

YUMM...very tasty. (there has been good eating around my house lately!) I would repeat this again. I loved the combination of flavors and the fact that the crust stayed on the chicken :D

Dh really liked this and I thought it was good, but the creamed corn threw me off. I think I'm not a creamed corn fan and therefore the combo of flavors was a bit funny for me. But I ate it all! And DH thought it was very good. Definite comfort food.

Skinny Chimichangas
WW Take out tonight

Another take out tonight winner! Loved this. Used Laura's lean ground beef and just upped the garlic and spices to my flavor level. I also added chopped fresh cilantro. I thought it would be a terrific filling for tacos and over nachos supreme as well :D

Once again, thanks for your reviews. :) We tried the Cashew Crusted Chicken awhile back and also liked it. Very simple to make!

will make these again.

wow this is an oldie thread :D

I agree...it is tomatoey for a chimichanga, but I really liked the filling. I think the filling would be great for nacho topping or tacos as well.
