Another "It's Almost Summer" meal last night. This was a lot of fun.
The Turkey Cheeseburgers were juicy and flavorful. We ate sans buns- just thickly-sliced tomatoes and Dijon mustard. They'd be even better on the grill- I was cold and tired and didn't feel like hanging out on the back patio while they cooked :rolleyes: Easy to assemble, quick-cooking. To be repeated, fer sher.
Black-eyed Peas with Greens I didn't notice until I started in on the recipe that this called for fresh black-eyed peas. SO I used canned. I cut back on the servings- used one can of peas, halved the amount of onion and chard. No butter- just slow-cooked the onions in cooking spray (about 15 mins instead of 5) I also subbed Tabasco for the spicy vinegar.
A new and flavorful way to use chard; I love black-eyed peas, so this was certain to make the tastebuds happy. Simple and good- great with the burgers. It would also be GREAT served atop POLENTA!! :D
Also made Sweet Sweet Potatoes from Moosewood Low-fat Favorites. Terrific and to be reviewed on a separate thread, as custom now dictates ;)
