I'm looking for the recipe for rosemary-garlic flank steak for my New Year's dinner, and I can't find my copy of the Sept 1999 magazine (or a copy of the 1999 Cookbook in stores) Can anyone help???

1 1/2 lbs flank steak
1/2 cup dry red wine
1 tsp chopped fresh or 1/2 tsp dried rosemary
1 tsp olive oil
1/2 tsp coarsely ground black pepper
1/4 tsp salt
4 garlic cloves, minced
Cooking Spray
Red Onion-Garlic marmelade
Lavender sprigs (optional)
1. Tim fat from steak. combine wine and next 5 ingredients (wine through garlic) in a zip top plastic bad. Add steak to bag;
seal. Marinate in fridge 2 hours, turning occasionally.
2. Prepare Grill
3. Remove from bag; discard marinade. Place steak on a gril rack coated with cooking spray; gill 8 minutes on each side or until desired degree of doness. Place on a platter; cover with foil. Let stand 5 minutes. cut diagnoally across grain into thin slices. Serve twith red onion-garlic marmelade. Garnish with lavender sprigs if desired.
Red Onion-garlic marmalade:
8 cups vertically slice red onion
1/4 cup red wine vinegar
1 tbls veg. oil
1 1/2 cups dry red wine
1 tablespoon direc herbes de provence or thyme
2 tblsp. brown sugar
1/2 tsp salt
1/2 tsp balck pepper
8 garlic cloves
1. combine onion and vinegar in a large bowl, toss well
2. Heat oil in a large Dutch oven over medium high heat. Add onion mixture. cook 5 minutes, stir occasionally. Stir in wine an remaining ingredients; bring to a boil. Reduce heat. Simmer until liquid almost evaporates; stir occasionally (about 1 1/2 hours). Increase heat to high. Cook 3 minutes; stir contantly. Yield: 2 cups, serving size 1/3 cup.
