Does anyone have any good recipies for sourdough bread? I found recipies for starter, waffles, etc. in previous threads and several people mentioned they had some good recipies but I can't find them!

My basic sourdough bread comes from Bon Appetit. I usually double it.

1/2 c sourdough starter
1 c lukewarm water (95 deg)
2 c all purpose flour

Stir together in a bowl and cover with plastic wrap. Let stand in warm area overnight (I have gone as long as 24 hrs, which gives a more sour flavor to the bread).

1 tsp sugar
1 tsp salt
2 c all purpose flour

Add sugar and salt to starter mixture. Gradually mix in flour. Turn dough out onto a very lightly foured surface and knead until smooth and elastic (5-10 min). Turn into a greased bowl, turning to cover all surfaces. Cover with plastic wrap and let rise in warm place until doubled (1-2 hrs).

Sprinkle baking sheet or peel with cornmeal. Punch down dough and shape into loaf (about 12 inch long or a large round). Transfer to baking sheet or peel. Cover with plastic wrap and let rise until doubled, about 1 hr.

Make 3 slashes in top of loaf. Brush top with beaten egg white (for brown color and a little gloss). Bake 10 min. and brush with egg white again (I don't usually do this twice). Continue baking until loaf is nicley browned and sounds hollow when tapped on bottom, 20-30 min. Cool on wire rack and wait until cooled before slicing.

For crisper crust, place a pan with a cup of boiling water below bread in oven, or spray loaf with water in a clean mister when putting it in the oven and again in about 5 min, or (depending on your oven) toss a couple of ice cubes on the floor of your oven when you put the bread in. The idea is to generate some steam.

By the way, sourdough makes a great pizza crust, and Beard on Bread has a great Sourdough Rye recipe.

Karen, try looking at this thread where I posted 2 different starter recipes (I don't know for sure which one is my survivor). There is also another one posted by Anne that uses potato. I have wanted to try one like that but haven't yet. There are many variations. Hope you have fun with one.

Tip: Make sure to start with filtered or bottled water or to boil and cool it to get rid of the chlorine that will kill the sourdough bacteria.

I can't help you there, never having used a bread machine. However, sourdough will react with metal (which is why the starter is usually stored in a crock, glass or plastic container), so I'm not sure that I would try it unless you have instructions for a bread machine or advise from someone who has tried it.

I recently picked up one of those grocery store recipe booklets, Gold Metal's "Best Bread Machine Recipes" and there is a recipe for sourdough starter and bread in it. Haven't tried it yet--takes days to get the starter going.
