I got my June issue of Fitness magazine last week and they have a bunch of good-looking burger recipes in there. So good-looking, in fact, that DH and I decided to try one already. We picked the Chili con Carne Burgers and DH made them tonight for dinner. YUM! These were so good! After trying the Mexican Chili-Cheese Burgers from CL a few weeks ago and liking those a lot, they've now been bumped as a repeater in favor of this new recipe! DH followed the recipe exactly, except for using 93% lean beef and possibly adding a little extra cumin. These would be really great on the grill, but we don't have one yet so DH used his cast-iron grill pan instead. They got a little crispy that way, but they'd be awesome on a real grill! They remind me of eating a taco. I topped my with some salsa and DH topped his with onions and ketchup. I can't wait to try some of the other burger recipes from this article, hope they're just as good. Anyway, here's the recipe if anyone's interested...
Chili con Carne Burgers
3/4 cup canned black beans, rinsed and drained
3/4 lb extra-lean (95% fat-free) ground beef
2 Tbsp ketchup
3/4 tsp chili powder
3/4 tsp ground cumin
1/4 tsp kosher salt
1/8 tsp coarsely ground black pepper
4 hamburger buns, toasted
salsa
4 leaves green leaf lettuce
1. Coat grill or broiler rack with cooking spray; heat grill to medium-high for direct heat, or heat broiler.
2. In a large bowl, mash black beans with a fork until most, but not all, are crushed. Stir in ground beef, ketchup, chili powder, cumin, salt, and pepper; mix to combine. Shape into four 3 1/2" patties.
3. Grill or broil 10 minutes, turning once, or until meat thermometer inserted in the sides of the burgers registers 160 F.
4. Serve on buns with tomato salsa and lettuce leaves.
Makes 4 servings.
Per serving: 350 calories, 22g protein, 31g carbs, 14g fat, 4g fiber

Thank you for the review, I will have to try these (soon!). I tried the Mexican Chili-Cheese Burgers a few weeks ago and we all really liked them, so I look forward to trying these.
I also wanted to ask how you like Fitness magazine. I have picked it up once or twice, but I am always looking for good reading material.

I like Fitness a lot. I used to buy it quite often and finally decided I should just get a subscription. I think it's a good mix of fitness, health, beauty, fashion, nutrition, and recipes. I've only tried 2 of the recipes so far, but they were both fantastic so I look forward to trying others. I also like how they review a lot of the new exercise trends and equipment, letting you know what is worth it to try or not. I just got some of those resistance bands to try and build up some muscle at home (no time to join a gym right now) and they had a whole article on how to work out with them. Overall the magazine just seems more "real" in their information than some others which are more "fluff" about how to stay healthy, like "10 Moves for a Flat Stomach by Tonight". :rolleyes: Sorry if I rambled on here, you probably got more information than you wanted, but hopefully some of it was helpful. :)

TerriS, I would assume that the nutritional info does include the hamburger buns, since the recipe specifically called for 4 hamburger buns. Maybe someone with Mastercook could confirm this, though.
Terrytx, the other burger recipes in the article are Greek Lamb Burgers w/ Tzatziki Sauce, Turkey-Spinach Cheeseburgers, White Bean Burgers w/ Honey-Mustard Mayo, and Asian Salmon Burgers. If you'd like any of the recipes, I would be glad to share them with you. :)
BTW, the White Bean Burgers are vegetarian, in case anyone is wondering. (Although you could probably have just assumed that from the title :rolleyes: )

Here you go! These were next on my list to try from this article, so if you end up making them I'd love to hear how they are.
Turkey-Spinach Cheeseburgers

These all sound wonderful! I want to see the others too! I am not a fan of plain ol' beef burgers but really like the idea of jazzing something up, now that grilling season is here.

The Chili con Carne Burgers were absolutely amazing. I followed the recipe for the patty but added light Monteray Jack cheese and tomato to the burger. I also used a spicy ketchup. I added mayo to my bun but decided that it really didn't need it.
I can't say enough about this recipe. I rate my recipes out of 4 stars and this was four stars all the way. Thank you so very much for posting this recipe. It will grace my table over and over.
And by the way - it was that great made in a grill pan on the stove. I am salivating at the thought of them made on the BBQ!

I'm so glad you enjoyed the burgers! :) I always wonder if other people will react the same way I do to a recipe, like maybe it was some kind of fluke that mine turned out well, or I have really bad taste or something :rolleyes:

White Bean Burgers w/ Honey-Mustard Mayo
Mayo:
1/4 cup reduced-fat mayo
1 Tbsp honey mustard
Burgers:
1 can (15.5 oz) cannellini beans, rinsed and drained
1/3 cup dry bread crumbs
1 celery stalk, minced (about 1/3 cup)
1/4 cup finely chopped Italian parsley
1/4 tsp dried sage
1/4 tsp kosher salt
1/4 tsp coarsely ground black pepper
4 English muffins, toasted
1 medium tomato, thinly sliced
1 cup alfalfa sprouts
1. In a small bowl, combine mayo and mustard; stir until smooth. Cover and chill until ready to serve.
2. Meanwhile, coat grill or broiler rack with cooking spray. Heat grill to medium-high for indirect heat, or heat broiler.
3. In a large bowl, mash beans until most of them are crushed. Stir in bread crumbs, celery, parsley, sage, salt, and pepper until well combined. Gently shape into four 3" patties.
4. Grill or broil patties for 10 minutes, turning once, until lightly browned. Serve on muffins with tomato, sprouts, and honey-mustard mayo.
Makes 4 servings
Per serving: 333 calories, 10g protein, 52g carbs, 8g fat, 7g fiber
Asian Salmon Burgers
Burgers:
2 cans (6 oz each) skinless, boneless salmon packed in water, drained well and flaked
1 egg, beaten
1/4 cup dry bread crumbs
4 scallions, minced
2 Tbsp finely chopped fresh cilantro
1 tsp Dijon mustard
1/8 tsp coarsely ground black pepper
Asian Vinaigrette:
2 Tbsp orange juice
2 Tbsp rice wine vinegar
2 tsp vegetable oil
1 1/2 tsp sugar
1 tsp reduced-sodium soy sauce
1/2 tsp grated fresh gingerroot
1/4 tsp toasted sesame oil
6 cups mixed baby greens
2 cups watercress, stems removed
1 tomato, cut into wedges
1. Coat broiler rack with cooking spray. Heat broiler.
2. In a large bowl, gently combine salmon, egg, bread crumbs, scallions, cilantro, mustard, and pepper until just combined (do not overwork or burgers will be tough). Gently shape into four 3" patties.
4. Broil 10 minutes, turning once, until golden brown and cooked through.
5. In the meantime, combine vinaigrette ingredients in a large bowl and whisk together until smooth. Add mesclun, watercress, and tomato wedges; toss well to combine. Evenly divide among four plates and place salmon patties alongside.
Makes 4 servings
Per serving: 224 calories, 16g protein, 13g carbs, 12g fat, 2g fiber

Mareli.... I did a search and did not come up with anything resembling the Mexican Chili-Cheese Burgers. Where did you find them? They sound great!

Another thumbs up in my house! DH and I loved them. The cumin flavor really shines through, but is not overpowering. We made them on the grill. Yum! :)

Kim, I got the Mexican Chili-Cheese Burgers recipe from the CL recipe finder. I know there were some reviews on the BB, but I can't remember if anyone posted the recipe.

The Chili con Carne Burgers were a hit at our house. They went together in a snap. Lots of flavor and they were nice and moist. These will be made again here.

We had the Turkey-Spinach Cheeseburgers last night and thought they were really good. The only thing I did different was to add a few shakes of garlic and onion powder. Nice flavor and sooo easy to do.

Wow, I am surprised to see this thread pop back up! I am happy you and your DH enjoyed the burgers, and thanks for reminding me of this recipe. I just got home today to beautiful, warm weather, which really puts me in the mood for grilling. :)

Bumping back to the top again! We made these on our camping trip this weekend and they were sooo good! Everyone loved them! I made them with the lean ground beef from Costco (I think 95% lean, but I'm not sure), and I doubled the recipe. The guys ate 2 burgers each (kinda defeating the whole "low-fat and healthy" thing :rolleyes: ).
They're definitely great if you're looking for something a little different from plain old burgers.
We might be making these for some friends next week. Does anyone have any good sides to recommend? I've been excited to try these!

Thanks Kari for a great recipe!!!! We made these last night and had some friends over. I followed the burger recipe except increased it to make 5 burgers.
DH requested an old favorite, Beer-Battered Onion Rings from 3/00 and we loved them together. A friend brought a great salad with yummy cheeses and tomatoes, another friend brought some snacks and wine :D and our other guest brought treats from Greektown. Kind of a mix of food, but we didn't care! The company was great.
Everyone loved the burgers and we served them on TJ's buns with some sauteed onions, salsa and guac.
Definite repeater and soooo easy to make.

DH and I made these Saturday night and loved them! Earlier in the week I had made the creamy cilantro dip that was posted last week and DH used that on his burger ans said that it was fantastic.
Can't wait to try the other burgers Kari posted about. I would love to see the recipe for the Greek Lamb Burgers w/ Tzatziki Sauce, would you mind posting it Kari?

Prepare grill.
Combine first 3 ingredients.
Place corn on grill rack coated with cooking spray; cook 12 minutes or until corn is lightly browned, turning frequently. Place corn on a platter; drizzle with crema. Sprinkle with chipotle mixture. Garnish with lime wedge.
serving size: 1 ear - 160 cal, 5.2g fat, 5g pro, 28.2g carb, 4g fiber, 8mg chol, 0.8mg iron, 228mg sod, 24mg calc.

I would post the recipe is I still had it, but I don't save my Fitness magazines and this one was from last year. I just copy the recipes I want into MC, but I didn't save the lamb burgers because I don't eat lamb. Sorry. :(

Greek Lamb Burgers With Tzatziki Sauce
Tzatziki sauce is a classic and refreshing Greek dipping sauce that also happens to be fat-free and low in calories. Make a little extra to use as an anytime dip for vegetables or to spoon over grilled fish and chicken.
Ingredients:
Tzatziki SAUCE
1 cup plain fat-free yogurt
1 small Kirby cucumber, peeled and finely diced
1 tablespoon finely chopped
fresh mint
Burgers
3/4 pound lean ground lamb
1/2 small zucchini, grated
2 tablespoons minced red onion
1 teaspoon dried oregano
1/4 teaspoon kosher salt
1/8 teaspoon coarsely ground

4 (5-inch) whole wheat pita breads, warmed
Directions:
In a bowl, combine tzatziki ingredients; cover and chill. Meanwhile, coat a grill or broiler-pan rack with cooking spray. Heat grill to medium-high for direct heat, or heat broiler. In a large bowl, loosely combine burger ingredients. Gently shape into four 3-inch patties. Grill or broil 10 minutes, turning once, or until a meat thermometer inserted in the sides of the burgers registers 160¢ªF. Serve in pita breads with tzatziki mixture on the side.

Here you go! We love them, but they are messy to make and we always end up using more oil and more batter!
Beer-Battered Onion Rings
From Cooking Light
Unless for some unknown reason you have an open can of beer in your refrigerator, try this simple way to flatten the suds you need for this batter. Measure 1/2 cup beer in a small bowl, and stir with a fork. You're left with about 1/3 cup flat beer.
2 large onions, peeled (about 1 1/2 pounds)
2/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon paprika
1/4 teaspoon freshly ground black pepper
1/3 cup flat beer
1 large egg white, lightly beaten
1 1/2 tablespoons vegetable oil, divided
Cooking spray
1/4 cup ketchup
Preheat oven to 400°.
Cut the onion crosswise into 3/4-inch-thick slices, and separate into rings. Use 16 of the largest rings; reserve remaining onion for another use. Lightly spoon flour into a dry measuring cup; level with a knife. Combine flour, salt, paprika, and pepper in a medium bowl. Stir in beer and egg white (batter will be thick). Heat 1 1/2 teaspoons oil in a large nonstick skillet over medium-high heat. Dip 5 onion rings in batter, letting excess drip off. Add onion rings to pan; cook for 2 minutes on each side or until golden. Place the onion rings on a jelly-roll pan. Repeat procedure of dipping onion rings in batter and cooking in remaining oil, ending with 6 rings. Coat the onion rings with cooking spray. Bake at 400° for 10 minutes or until crisp. Serve rings with ketchup.
Yield: 4 servings (serving size: 4 onion rings and 1 tablespoon ketchup)
