I was looking for some breakfast casserole recipes, and I found a great website I wanted to share with you. This site has Breakfast Casserole Recipes that are used by Bed and Breakfast Inns. They all sound yummy. http://www.bbonline.com/recipe/casseroles-breakfast.html
I know there has been some reviews of the breakfast casseroles, but I'm really looking for a super-good absolutely delicious not necessarily light recipe. Please share if you have any that meet this criteria!!

Thanks for the website! We are having company for the New Year's Eve weekend and I just printed up "Donna's Ultimate Breakfast Casserole" to make and serve on New Year's Day!

I had a yummy grits casserole at a B&B about a year ago. I went on and on to the B&B owners about how yummy it was, when I came back to my room a copy of the recipe was on my pillow!
I just made it for Christmas brunch and I have to say, it tasted better when I didn't know how bad it was for me! (Whole stick of butter -ewwwww)
I would be glad to post it, I know how some of you are about grits! Do you eat grits in Washington?

Grits Casserole
1 cup raw grits
4 cups water
1 box Jiffy cornbread
1 cup milk
1 lb sausage
1 cup shredded cheese
1 stick butter
4 eggs
1 tsp salt
Add 1 cup raw grits to 4 cups boiling water and 1 tsp salt. Let cool.
Sauté 1 lb sausage and drain.
Beat 4 eggs with 1 cup milk.
Add all together with 1 box of Jiffy mix. Put in 13"x9" casserole. Cover all with cheese.
Bake at 325o for 30 mins.

Here's a brunch recipe that my DH and I cobbled together several years ago. It requires a bit of assembly.
Breakfast Enchiladas
1 package (10 links) Brown n’ Serve sausage links (any variety)
1 1/2 to 2 cups shredded cheddar cheese
1/2 cup salsa
3 green onions, sliced thin
10 small corn tortillas
1 1/2 cups milk
1/2 cup salsa
2 tablespoons flour
5 eggs, slightly beaten
salsa (optional)
sour cream (optional)
shredded cheese (optional)
Preheat oven to 350 degrees. Lighly oil the bottom of a 13”x9” baking pan, or coat with cooking spray.
To make filling, cook sausages in microwave as directed on package. Dice each link into 3 or 4 pieces. Mix sausage with cheese, salsa and sliced onions.
Divide filling evenly among 10 tortillas. Roll up and place seam side down in the pan in two rows of 5.
In a separte bowl combine milk, salsa, flour and eggs. Pour evenly over the enchiladas.
Cover pan with foil, bake for 45 minutes. Remove foil and bake for 15 additional minutes, checking to make sure the top does not overcook.
Let cool for a few minutes. Remove enchiladas from pan with wide spatula. Top with extra salsa, sour cream and cheese, if desired.
Note: this recipe can be varied in several ways: use an equivalent amount of ham as a substitute for the sausage links, or use monterey jack instead of cheddar cheese. Light ingredients such as egg beaters and low fat cheese and milk can also be used.

In search type "strata" I believe there are 3 recipes
Also you can try
Swiss Fondue Strata (Eating Well)
8 ounce whole-wheat bread, broken into small pieces
1 cup Gruyere cheese, grated
2 ounce country-style ham, coarsely chopped
4 large egg
4 large egg white
1 tablespoon Dijon mustard
1 3/4 cup 1% lowfat milk
1 cup low-fat cottage cheese
1/2 cup dry white wine
1/2 cup scallions, chopped
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon cayenne pepper
1/2 cup Parmesan cheese, or Asiago cheese, freshly grated
1. Lightly oil a baking dish or coat it with nonstick spray.
2. Arrange bread evenly in bottom of prepared dish. Sprinkle Gruyere and ham over the bread.
3. In a bowl, whisk eggs, egg whites and mustard until smooth. Whisk in milk, cottage cheese, wine, scallions, salt, black pepper and cayenne.
How to Separate an Egg
4. Pour egg mixture over Gruyere and ham. Cover with aluminum foil and refrigerate overnight or up to 24 hours.
5. About 30 minutes before baking, remove strata from refrigerator.
6. Preheat oven to 325 degrees F (160 degrees C).
7. Bake strata, covered, for 70 minutes, or until set. Uncover and sprinkle Parmesan (or Asiago) over the top. Bake, uncovered, about 10 minutes more, or until top is lightly browned and crusted. Let stand for 10 minutes before serving.

Made the Farmer's Casserole for Christmas morning brunch and its Gail's recipe and I know there is a thread out there but it was a fantastic recipe...make it the night before and bake in the morning-rave reviews! Don't have the thread right now but worth the search!!!!

One recipe that looks good to me is called the "Christmas Morning Wife Saver." It was posted by Lena S, I believe, I hope I'm remembering that right.
I haven't made it yet but I plan on it when I can get a crowd here for breakfast.
I suggested to Sharon that we make this recipe last week for Cristmas, Even though there would only be the two of us here in the morning, and I was told that with all the work there was to get ready for the kids and grandkids and the Christmas Dinner there wouldn't be any breakfast.
Well, Christmas morning arrived, and when I went out into the kitchen I found out that she was right, there wasn't any breakfast.
So that Christmas Morning Wife Saver had to wait, although my Wife didn't need that recipe to save her the work of a Christmas Morning Breakfast.
A light Breakfast of Toast is good for a guy when there's a big dinner in the offing. You tend to be hungry enough at 1 P.M. to really like that big dinner.

I stayed at a B&B in Julian, Calif called the Wikiup and the owner was kind enough to share her recipe for these delicious egg pockets:
Egg Pockets:
1 large can Pillsbury regrigerated crescent dinner rolls
4 eggs
1 cup shredded cheese (mild cheddar & jack)
2 tablespoons flavored Philly cream cheese (vegetable or onion)
4 1-1/2" by 1-1/2" sliced cooked ham (optional)
*Use only "Texas sized" (extra-large) muffin tin or 3" indivual baking dishes
Preheat oven to 325 degrees. Lightly coat muffin tin with no stick spray. Carefully unroll Crescent dough into two long strips. Ignore perforations. Cut each long strip into equal squares, making 8 total. line 4 of the muffin tin bottoms with 1 sqare each. Place one sqare of ham in each, gently break 1 whole egg in each. Place 1/2 tbsp of cream cheese in each. Divide shredded cheese into 4 equal portions, place in cups on top of eggs. Carefully tuck remaining squares of dough over cheese and eggs, tucking all corners down well into cups. Bake in center of oven for 20 to 25 min until golden brown. Serve hot with sauce of choice or Honey Dijon Hollandaise Sauce recipe below:
Honey Dijon Hollandaise Sauce:
to each 2 cups hollandaise sauce of your choice, simply add 1/4 to 1/2 cup hone Dijon mustard and 1/2 tablespoon finely chopped dill to taste.
I've made this several times to rave reviews and have lightened it up successfully. The last time I used a CL hollandaise recipe that I found on this board, but it did not turn out very good. I'll use the storebought kind in a packet next time.

This year I substituted Pepperidge Farm Dried Bread Cubes (unseasoned, usually used for stuffing) for the bread in my Strata. It saved a BUNCH of time and the results were fabulous. Highly recommend you try it with your favorite breakfast casserole recipe. -JennyLiz

The breakfast enchiladas looked so good, I made them tonight for tomorow...I changed it to fit what I had. I used turkey bacon and egg beaters. I cant wait to try it!

Egg-beaters are only egg whites with food dye. It's cheaper to just use egg whites with a drop of yellow food dye. I do it all the time and it's never a problem!

Here is the recipe for the casserole. You can make it ahead and freeze it raw too. (That is what the B&B does). This make a big casserole!
2 cups regular grits ( I used instant because it was all I could find)
1 1/2 quarts water
1/2 cup milk
1 tsp salt
1 stick butter
4 eggs slightly beaten
1 clove garlic !
12 oz sharp white cheddar
1 tsp hot pepper sauce
pinch of thyme
sausage cooked, drained and crumbled (1/2 to 1 tube)
Cook grits for 25- 30 minutes over low heat. (since mine were instant, I did what the box said)
In the last 5 minutes add garlic and butter.
Then add rest of ingredients.
Bake at 325 for 45 - 50 minutes!

OH! I guess I need to give the B&B some credit. This is from the Inn at Town Creek in Abbingdon, Virginia. If you are looking for a fun get away, Abbingdon is wonderful.
