I don't know about you, but I am so NOT hungry and tired of eating too many rich foods, it happens to me every year, though we enjoyed it while it was happening. We are having friends over for dinner tonight, a simple pork roast, onion confit, veggie casserole, roasted potatoes, fresh bread, and a salad. I think fresh fruit is all I can muster for dessert. Probably should serve apple sauce with it but I don't have time to make it. What about you, what are you cooking/not today?

Your menu sounds great. I've been cooking for days, so it seems. I really shouldn't make anything new, we should finish up the leftovers before I have to throw them out ... but I'm still in that cooking mood! I'm going to try a crockpot recipe that was posted here, Easy Chicken Santa Fe. Maybe I'll make a bread to go with it. I know what you mean about the rich foods. I've been working my way through a pan of ooey gooey brownies all weekend!

Good choice, Lauren. The Chicken Santa Fe is very good!

I was going to make Lamb Strudel last night, but didnt get the phyllo dough out in time to thaw, so I am cooking today by default. We have lots of leftovers....enough to last DAYS! I sould be glad the new issue of CL isnt out yet, cause I need to clean out the freezer first!

We will have our traditional black-eyed peas, cornbread, and collard greens today...a simple repast after all the richness of the holiday food.

Let us know how the lamb strudel is. I like Greek/middle eastern food, too.

i am NOT cooking today. LOL. I really love to cook actually, but my twins are sick and i'm just worn out..we also have a ton of leftovers here. My mother got me a subscription to CL for Chanukah (i was buying off the newsstand before) and I also can't wait to see what's new in the Jan magazine! Most likely today, I'll be making my meal plan for the week, as the holiday has thrown me off a bit, I usually do that on Sundays.

We are going to have pulled pork sandwiches today and a nice ceaser salad (from CL). We have actually been eating out alot- we had a snowstorm on Saturday so we went out for lunch and we weren't really hungry again for dinner. Last night, we joined my brother-in-law and his family for dinner so again I didn't have to cook. Today, with a ton of sinus pressure in my head, I don't think I'm going too far from home, so a nice slow cooked pork shoulder sounds good to me!

We're having chicken sandwiches. I'm trying to duplicate a sandwich I had in a restaurant that I thought was delicious! It's made on a French roll and it has grilled chicken breast, roasted red peppers, sliced red onions, tomatoes, etc. The crowning touch is a mayonnaise mixture that has cilantro and chili powder. I'm also making the potato salad from the CL 5 Star Recipe cookbook. For dessert, I'm making Chocolate Peanut Butter Pudding Cake in the crockpot. My sister and her husband will be here--and she's bring a salad and we're just going to potluck it.

Tonight I will make a roasted chicken and try Iqueen's recipe for collard greens (substituting black eyed peas for cannelini beans). Of course, dh is saying that he is still full from last night, so we may not eat until really late!

I always make Hoppin' John for New Year's Day. I'm thinking I will probably also make frozen spinach with non-fat sour cream and vinegar, and maybe roasted sweet potatoes. That should make a pretty plate.

My husband always makes the dip with cream cheese and canned tomatoes and jalapenos to snack on during the day.

Definitelly leftovers. Had pork loin, mushroom rice, cranberry, salad and I will either serve about the same or reinvent the loin into something else. I have fish and there is shrimp (cooked) so I might make a salad..HAPPY NEW YEAR TO ALL!!!

We're having a ham loaf (from leftover Honey-Baked ham), baked potatoes, cabbage and corn bread. The ham loaf is my absolute favorite ham meal and we only eat it once or twice a year since it certainly isn't light. Happy New Year everyone!

I am making African chicken peanut soup today, and salad. I have left over sweet potatoes from Christmas and other than Christmas, Thanksgiving, and this soup, I don't eat them. Have a wonderful day and New Year!

The lamb strudel was GREAT! We had a friend over and he RAVED over and over. I would definately make it again!

Happy 2001. We are having baked ham, cornbread, spinach caserole, homemade 4 cheese macaroni and my guest is bringing over some kind of jalapeno crab dip she learned how to make off of Emeril's show!

And of course black-eyed peas. I am somewhat superstitious. But they are great too!

We are having our traditional pork, sauerkraut and mashed potatoes. Not what I'd call a real light meal, but we have it every New Years Day. Then we'll probably sit around and watch football!

I haven't decided yet, but it might include clam chowder with black-eyed peas or hoppin' john with some wilted spinach. I usually make one of these or the Texas caviar (black-eyed pea dip) for New Year's. Haven't exactly won the lottery or anything, but it's a fun tradition. Maybe it does have some value...haven't had any major calamaties this year either!

ditto on the pork, sauerkraut and mashed potatoes. Not light, but it's one of my favorite meals of the year. Supposed to bring good luck and I'll take all the luck I can get...
