Hope everyone had a great Hanukkah and Christmas. I am looking for a great chili recipe using ground beef. It can be from Cooking Light or anywhere else. Thanks in advance for sharing!

Hi Goldilocks.

I make a good chili that all my friends and family enjoy--it is sort of our house specialty. The problem is I do not have an exact recipe. I will try to recreate it here.

Please do not post about how this is inauthentic chili. It is a Midwest version and lays no claim to Texas, New Mexico etc.

Chili with Three Beans

1 large, yellow onion, chopped
1 green pepper, chopped
1-3 jalapenos, chopped
2-4 cloves of garlic, crushed

Brown the above with 1 lb very lean ground beef.

In a large soup pot or kettle, combine:
1 can of black beans, undrained
1 can spicy chili beans, undrained
1 can black-eyed peas, drained
(all beans are 15-16 oz cans)
1 28-oz can crushed tomatoes
2-3 cans chopped tomatoes (15 oz size). These can be unsalted, regular or spicy.
1 15-oz can tomato sauce.

Heat the above canned beans and tomato products to a boil, then turn to simmer. When meat is brown, add it and the veggies to the pot.

The tricky part is the seasoning. I add a ton of chili powder, some cumin and cayenne, black pepper, a little cinnamon and about a tablespoon of cocoa powder. You sort of have to season to taste. We like it spicy and use a lot of cayenne. You also can use more or hotter chilis.

I keep a can or two of tomato paste or sauce nearby, in case it is not as tomatoey as I like it.

I also add about 1/4-1/3 bottle of beer to the chili.

This can simmer all day to deepen the flavor; just make sure it does not burn.

Serve with flour tortillas or cornbread.

Hi Goldilocks,

I don't really have a recipe, but my husband always makes Wick Fowler's 2 Alarm Chili mix with ground beef. It's wonderfully spicy on a cold night (we've had a few this winter in WI)! He adds beans, diced tomatoes and onions and garlic.

Does anyone have a chile recipe made with chicken or beef without the beans - I don't care for beans but love the flavors of chile.

Here's how I make chili & I always get good reviews. I make it all winter long.

1 to 1.25 pound ground beef (or turkey is what I usually use)
3 cans red kidney beans
2 cans diced tomatoes
1 large green pepper chopped
1 large onion chopped
2 tbsp minced garlic
1 can beef consume or broth (this helps give beef flavor when you use turkey)
1/2 bottle dark beer (optional)
1 package Carroll Shelby's chili spice mix - looks like a small brown paper sack
I use the main spice packet & the hot pepper - no salt or flour.
I usually end up adding about 1 tbsp chili powder.

heat onion & pepper. Brown meat & drain fat. Put everything in a big pot & let it simmer for about 45 minutes to let the flavors meld.

It's easy & good.
