View Full Version : REV: Chili and Lime-marinated snapper with black-eyed pea salsa (CL 05/03)

I am at work and don't have my magazine here, so I am not sure if this is the exact title.... :) I searched and couldn't find a review, but I apologize is there is already one.
I made this last night for dinner and it was delicious! I made everything ahead of time in the afternoon and once dinner time came all I had to do was broil the snapper. The salsa was amazing! Roasting the corn gives it a great flavor and I love the black-eyed peas - different, but great! A definite repeater for me!

I used salmon for this last night. ALthough I can't get excited about the marinade- it was fine- the "salsa" was fantastic! I wouldn't even classify it as a salsa- it is a black-eyed pea and roasted corn salad. Absolutely delicious- I'm about to finish it for breakfast :) Broil/roasting the corn makes all the difference- you just couldn't get away with frozen corn. It brings out the sweetness and complements the jalapeno so well.
We don't care much for raw onions, so I sauteed these while the corn broiled. And used basil instead of cilantro.
Great with fish or chicken- I'm falling for black-eyed peas!
Served this with Garlicky Green Beans and Roasted Indian Sweet Potatoes (old CL recipe). Delicious meal!!

You might just broil the onion with the corn next time and save a step, that is, unless you don't like broiled onions. :) I make a CL recipe for tomato-corn salsa that has broiled corn & red onion in it and it is excellent. Just a suggestion! :D

Good thought! These onions are diced-I don't know how easy it would be to dice already-broiled onions- and broiling diced onions would surely burn them to a crisp. How have you prepared the onions in the salsa you make?
JMHO but cooked onions have so much more flavor and depth- raw onions just give me heartburn!!

I slice the onion in 1/2" thick slices, broil the slices for a few minutes on each side, let them cool and then chop. Not sure if this is any easier than sauteing the onion but it does give it a nice flavor. I am not a big raw onion fan either, especially white onions. Red in small doses is ok as are green (but that's a bit different). I agree about the heartburn. :D ;)

YUM! This was really delicious. I marinated the fish a little over an hour (used tilapia instead of snapper) and we grilled it rather than broiling. It was excellent and the salsa was excellent also. I served the salsa at room temperature with the fish on top, and it looked just like the picture. 1 aside-we have an abundance of tomatoes right now (from the garden) and the DH was a little put off cause he thinks all salsa should have them. I had to promise him I would make him some for the weekend.

I made this last night and thought the salsa was so good!. Since I didnt read the recipe ahead of time, the salsa didnt get chilled, but that didnt make a difference. I roasted my corn over the stove since it was too hot to use the oven and came out just fine. Unfortunately my fish wasnt so good, just a bad piece. I agree witha previous post tthe salsa was more like a salad than a salsa, would make again. This is the first time I have eaten black eyed peas and I Liek them!

Did everyone use fresh black eyed peas? I have never seen them before. Where did you get them...farmer's market, Whole Foods, or TJ's? I have been eyeing this recipe, but I have no idea where to find fresh black eyed peas.

PoppyJ, like you I had no clue where to find them, I thought they would be in pods, I went to the produce section at Safeway and he gave me a clear plastic tub of the peas that was in refregerated section in the produce dept. Because of this I thought they were cooked, but werent so the need the half hour of simmering.
I am sure whole foods has them.
