I have some leftover sundried tomatoes in oil.
Does anyone have any killer recipes so that I can use these expensive guys up?

I don't have any recipes off hand - but I use them all the time in cooking (I keep a jar in the fridge all the time). They're great in pasta - with some toasted pine nuts & goat cheese maybe, maybe some asparagus. I use them on pizza too.
i agree with Leanne that they last a long time. We usually buy a huge jar at Costco, and sometimes the oil seems to solidify, but you can just microwave the jar (take the lid off) for a little and the oil looks normal again.
we pretty much always toss them into pasta (my favorite when there's a pesto sauce or a cream sauce). you could make your own sundried-tomato pesto, toss them into salads, or maybe even make focaccia sandwiches with them & some melted mozzarella or provolone... on pizza sounds good too. http://www.cookinglight.com/bbs/smile.gif i could probably just eat them plain!
i think i read once that italians never eat sundried tomatoes the way that we do - they use them in the seasons when tomatoes are not so perfect to make tomato sauces.

Thank you, that is helpful and what I needed to know.
Question: How long do you think they last in the fridge if they have been opened? (in a glass jar with oil)

They last forever. Not literally - but I've had them in my frigde for months & never had a problem. One time (after a very long time) the oil looked a little funny - (opaque)so I tossed some.
