hey all. i havent posted a recipe review in quite awhile, but i am eating a mighty tasty bowl of black beans right now & thought i would share. this recipe was posted on the bb by catharine.

it has a kick to it, which i like. all the ingredients are easy to have on hand, and it takes 20 minutes to make. my christopher ranch garlic was huge this week, so my 2 cloves equaled about 4 regular cloves. i used the fresh cut diced tomatoes with garlic & onion. i went to the bakery today so i ate this with a crusty french bread to soak up any of the juices. this will become one of my weeknight standbys.

oh and look how healthy it is.

SPICY BLACK BEANS AND TOMATOES

Veg. cooking spray
1 t. olive oil
1/2 c. chopped onion
2 cloves garlic, minced
2 (14.5 oz) cans no salt added whole tomatoes, drained and chopped (I used Fresh Cut diced tomatoes)
2 T. canned chopped green chilis
2 (15 oz) cans black beans, rinsed and drained
1 T. chopped fresh cilantro (dried works fine too)
1/2 t. ground cumin
1/2 t. ground red pepper
1/4 t. chili powder

Coat a large nonstick skillet with cooking spray; and the olive oil. Place over medium heat until hot.

Add the chopped onion and garlic; sauté until tender. Add the tomatoes and chiles; reduce the heat and cook, uncovered, 6 to 8 minutes or until slightly thickened, stirring occasionally.

Stir in the beans and remaining ingredients. Cover and cook 5 minutes or until thoroughly heated. Serves 8 (four in my house).

Per serving (for 8) Calories 86; Prot. 7 g; Carb 18 g.; Sodium 149 mg; Fat 1 g (11% cal. from fat).

This recipe is fantastic! I make it at least twice a month and always double the recipe. The leftovers are just as good. We eat it over rice with shredded cheese, chopped onions and diced avocado. It also makes a delicious burrito filling. I have also made it with pinto beans and we liked it just as much.

So glad you love it like I do. It is awesome because it is easy to make but totally packed with flavor. It freezes beautifully, by the way. I am thinking about whipping up a batch tonight with the black beans I cooked in my pressure cooker.

I made this last night, and all I can say is WOW!

I used the Tabasco Chipotle chili sauce instead of the red pepper, and used parsley instead of the cilantro (hubby hates cilantro).

Even Mr. Picky, the resident teen alien, loved it!

This sounds great - thanks for posting. I think this would be good to keep on hand for quick lunches during the week. I get so tired of sandwiches. I love to make tortilla wraps so this would be wonderful!

Yup, this recipe is a winner. I make it about twice a month as a quick dinner when I get home late from work. Easy and tasty...just my kind of recipe.

This was part of dinner last night. I doubled the spices and added a little more onion. Very easy and really tasty. This could easily be served over rice as a meal in itself.

I make this with the addition of frozen corn. We eat it as an appetizer with sour cream and corn chips, or over rice as a meal.
It freezes well, also, since there are just the two of us and I tend to make too much.

I just love this recipe and have made it several times, I just whipped up another batch a few minutes ago. I am on weight watchers and was trying to figure out the points but there wasn't a fiber amount...does anyone know what the fiber would be ? Thanks!

This looks fantastic! I saw this quite awhile ago and meant to print it. I am in a teeny tiny very user-unfriendly kitchen while I am in graduate school and this look so easy as well. I have been a semi-vegetarian for the better part of twenty years now so this is right up my alley!

We love this recipe! I copied it when Catharine posted it before and have been making it ever since. It tastes great in a wrap, and I love to put it over brown rice. Perfect for lunches too.

How timely! I've been wading through Master Cook this evening looking for a BLACK BEAN recipe to try (I'm really in the mood tonight!), then decided to take a quick peek at the BB, and boom! Made this last night for dinner - very easy, yummy, and filling! Topped it with a bit of cheddar cheese and diced avocado. A definite repeater!
