Thank you everyone for the wonderful suggestions!! First let me tell you that they operated on my friend yesterday, installed an interim cardiac fibulator to prevent this problem from occurring. It wasn't anxiety at all! She can come home today!! Her husband is going through chemo treatments for bone cancer, so you can understand how devasting this was for her family, but our prayers were answered!
We roasted a chicken, thanks Susan! And I made a wonderful beef barbecue brisket, and last but not least scalloped potatoes and ham. Today, I made chicken soup and lasagne. Fresh fruit and veggies are also coming from a friend.
Once again, thank you all for your suggestions, what a wonderful support network! I hope that I can return the favor some day!!
Sincerely,
SusanL

Glad to hear your friend is doing better. What a hardship that must be for the family to have both parents ill. I didn't post a recipe on your original request but I have a pork chop recipe that I take to friends, it's easy to fix and can be baked when needed.
4 pork chops
3/4 cup rice (uncooked)
1 (10oz) can beef boullion
1 green bell pepper, sliced in four pieces
1 onion, sliced in 4 pieces
1 tomato, sliced in 4 pieces
Brown the chops in a skillet. Place the rice in a 9x13 casserole dish. Put the chops on top of the rice and place a slice of onion, tomato, and green pepper (in that order) on top of each chop. Pour the boullion over the casserole. Cover with aluminum foil. You can bake at this point or refridgerate until the next day. Bake at 350º for one hour or one hour and 15 minutes if baking next day.
Will pray that everyone continues to get better and has a better 2001.
SusanL,
So glad to hear that your friend is home. Sounds like you've been feeding her boys really well!
