I Just purchased Tyler Florence's new cookbook "Real Kitchen" at Costco (19.99). Has anyone made anything out of this yet that they thought was especially good? TIA

I made the Banana-Pecan Pancakes with Maple-Honey butter page 100. They were excellant. I cut the recipe in half and it was plenty for two.
I also made the Slow-baked Salmon page 38. It was very good. I didn't make the herb part because i didn't have fresh herbs. But the salmon and the Honey-onion marmalade was great.

Any opinions on this BOOK ? I already know what you all think of the man!;)

Ok, a related question about Tyler........do yall think he might be gay??? DH swears that he is. I never thought so myself until we saw the Food 911 episode where he cooked with the gay couple. It almost seemed like he was flirting. What do you think? I will still have a crush on him regardless of his preferences, of course :-)

I was looking at his book and he thanks his longtime girlfriend...so I don't think he is.:)

Ha!! DH will just have to live with my crush then. Most excellent! (whenever I have a crush, he tries to find something wrong with the guy. My other crush, DH says he's too tall! These are only celebrities, I should point out. No real crushes.)

Sorry, sindee, to hijack your thread. I return you now to the original question.

P.S. I don't have his cookbook, but have made his calzones and chili rellenos (sp?) from his Food 911 show. I plan to make his apple pie that I saw on Tyler's Ultimate this week.

I don't suppose you could post the recipe? DH just brought back a ton of salmon and halibut from a fishing trip in Prince Rupert and this recipe sounds great!

Personally, I adore Tyler :D

I bought the cookbook earlier in the year when Tyler was at an area Panera Bakery doing a food demo.
He is just too cute.
So, I have the cookbook, but have not yet tried even ONE recipe!!!!

Terri
I think I spent nearly $30 for it.

I ordered the cookbook right when it came out a few months ago. I believe there are other threads with reviews on some of the recipes if you do a search for Tyler's cookbook....I found the thread here's the link http://community.cookinglight.com/showthread.php?s=&threadid=36646&highlight=Tyler+Florence
The Spaghetti and Peas and Bacon is great.
The Banana-Pecan Pancakes with Maple-Honey butter is excellent.
Hong Kong Crab Cakes---yum!
There is a sirloin steak recipe that DF loved...I don't eat beef, so I can't give my own review.
So far everythings been very good.

Linda, I can post the salmon recipe tonight.

Quite a few of the recipes look very tempting, but I haven't made any yet. (Got mine for $1 through a Good Cooks bookclub intro offer. )

I already know what you all think of the man!

I wish he'd stop talking with food in his mouth.

Ya'll mean to say there are RECIPES in this book???!!! I just don't have the heart to turn over the cover yet!!!! The Herb-&-Lemon-Roasted chicken w/smashed broccoli & garlic is quite good, BTW. In addition to the girlfriend credit in the book, I could swear I heard him mention his son on an Ultimate show. My only Tyler gripe is that he's always sticking his finger in stuff other people are going to eat!!

Here's the
Slow-Baked Salmon w/Asparagus & Honey-onion marmalade

Serves 2

Salmon & Asparagus
l/4 bunch fresh flat-leaf parsley
l/4 bunch fresh chives
l/4 bunch fresh tarragon
l/4 bunch fresh cilantro
l l/2 tsp. dry mustard
Juice of l lemon
l/4 c. + 3 Tbs. canola oil
sea salt/fresh ground black pepper
2 salmon fillets, 6-8 oz. each, skin removed
about l" thick
l bunch asparagus, stems trimmed

Marmalade
l Tbs. canola oil
l Vidalia onin, sliced
2 Tbs. orange juice
l l/2 tsp. honey
sea salt/fresh black pepper

Preheat oven to 250F & line baking pan w/foil. Combine herbs, mustard, lemon juce, & l/4 c. canola oil in blender/food processor & pulse to make a puree. Season puree w/S&P & set aside to let flavors marry. Place both fish & asparagus in baking pan and drizzle them w/remaining 3 Tbs. canola oil; season with S&P. Bake salmon & asparagus for 20 min. While they cook, make marmalade.

Heat a skillet over med.-low heat. Coat pan w/oil & add onion. Add a couple Tbs. water to help onion break down & slowly cook it, stirring, til it caramelizes & releases natural sugars, about 20 min. When very soft & cooked down, stir in the OJ & honey. Season w/S&P. Mixture should have consistency of marmalade.

Remove salmon/asparagus from oven. Drizzle w/the herb puree and serve w/honey-onion marmalade on the side. Garnish w/a few fresh herbs.

Hong Kong Crab Cakes

2 garlic cloves, minced
1 tablespoon grated fresh ginger
peanut oil
1 lb. lump crabmeat
1 cup fresh bread crumbs
1 green onion, finely chopped, white and green parts
2 tablespoons mayonnaise
1 1/2 teas. red chili paste, such as sambal
Juice of one lemon
1 egg white
sea salt and black pepper

Bok Choy
Peanut oil
2 inch piece fresh ginger
2 heads baby bok choy, halved lengthwise
1/4 cup low-sodium soy sauce
1/4 cup oyster sauce
juice of 1/2 lemon
2 tabl. brown sugar
Sesame seeds, cilantro, and green onion to garnish

saute garlic and giner in a tablespoon peanut oil for a few minutes. Remove from heat. In a mixing bowl, combine the crabmeat, bread crumbs, green onion, mayonnaise, chili paste, lemon juice and egg white. scape the garlic-ginger oil into the bowl; season with salt and pepper. Fold the ingredients together gently but thoroughly, taking care not to mash the crabmeat. using your hands, form the mixture into 4 crab cakes; they should be moist and just hold together. Put the crab cakes on a plate, cover with plastic wrap, and refrigerate while preparing the bok choy.

Cover the bottom of skillet with a 2 count drizzle of peanut oil and heat until almost smoking. Split the peice of ginger open with a knife, then whack it with the flat side of the knife. Lay the ginger pieces in the oil, cut side down, to let them start to perfume. Pan fry the bok choy, cut side down, for a couple of minutes to give it some color. Add the soy sauce, oyster sauce, lemon juice, and brown sugar. Thin out the saice with 1/4 cup water. Cook 5 mins. or until the sauce has a syrupy consistency.

Coat another skillet with 4 counts peanut oil and bring it to a slight smoke over medium heat. Fry the crab cakes until brown, about 5 mins. on each side, turning carefully with a spatula. serve the crab cakes with the bok choy and garnish with seasame seeds and cilantro, and green onion.

JoanieB - So funny that you mention him sticking his food in food - my grandmother won't watch anymore because she says he is constantly licking his fingers and sticking it back in a dish!!

Regarding the cookbook - I have made the coconut bread - absolutely delicious - though I may make it in two loaves instead of one next time (it dried out a bit on the ends) and the blueberry - lemon scones. Thumbs up on both, they were absolutely delicious.

Don't want to gross anyone out....but every cook at every restaurant does that. It's essential to testing food, and restaurants just don't have dozens of little clean spoons lying around.

well, I tried posting yesterday but for some reason it didn't take!

I have only made the pot pie and it is incredible! One of those I will never make another recipe other than this one!

Dh, being a die hard pot pie fan, loved it and devoured it!
It's a great book just to read and look at as well!

I'm at work & can't remember the exact names of the recipes but I did make the following:

Burgers with Havarti and Tomato Remoulade (quite tasty)

Blackberry/Rosemary Crumble--served it with creme fraiche--the rosemary was an interesting addtion

Arroz con Pollo with Salsa Verde--I actually made this a couple of years ago when he did it on Food 911---it is wonderful

Hijacking the thread here...but do you all think that Michael Chiarrello (from his Napa style cookshow) is gay??
He's got 2 or 3 daughters...but that doesn't mean anything...and NOT that there's ANything wrong with it (ala Seinfeld :D )
