i read the old thread about the egg board's freezing directions (it worked beautifully, by the way!)...*but*

i was wondering if you have any thoughts on the best quantities to freeze them in?

i froze 12 in one container and only used 3 of them after defrosting, which took DAYS.

has anyone tried re-freezing them?

or would it be better to freeze 2 at a time in small cups and then store them in a zip lock as egg-cubes?

Well, this is just my opinion but I wouldn't refreeze the defrosted yolks, expecially since you mention it took days to deforst. Freezing in batches of 2 or 3 would probably be better and they would defrost faster.

I agree. It is not recommended to refreeze raw meat, and I think raw eggs would fall into the same category. Better to freeze in "egg cubes" of 2 or 3.
