View Full Version : One more way to cook vegetables

I have immensely enjoyed roasting vegetables which I learned from this board(My family fights for that last piece of broccoli/asparagus...)

I just thought that I would share another method I know and use which is especially good when you are in a hurry and have to use frozen veggies. But it is also good with fresh veggies, if you want something different from the usual.

It is more of a method than a recipe...

Boil chopped vegetables (say enough for 4 servings) like beans, cabbage, potatoes, sweet potatoes, carrots or beets or even Spinach ...) with very little water in a microwave just until cooked. Do not drain. Sprinkle with one or all of the following according to taste/availability and lightly toss:

salt
B.pepper
Cayenne
red pepper
1/2 t turmeric
1/2 t coriander powder
(If I could use only one, I would use salt, but that is just me.)

Heat a skillet with 1T oil and add the following in order:
1. 1/2 t Black mustard seeds(the pan has to be hot enough for them to splutter)
2. 1 t cumin seeds
3. 1 green chilli(chopped)
4. 1 whole red chilli (dried or fresh)
5. curry leaves
6. 1/4 c onions (chopped)
7. 1-2 cloves garlic (minced)
8. 1/4-1/2 cubic inch ginger.

(Again, I have always left ingredients that I don't have or just because I don't feel like chopping onions etc. But you have to have the oil.:)

Now add the seasoned vegetables and stir-fry them for two minutes or till the water from the microwaved vegetables evaporates completely.

You can prepare all frozen vegetables this way.
