I just completed my menu. Some things are new to me, some are old standby's.

I sometimes specify the days I am going to make things, but it never works out :) So this week I am going to try to make these new CL/CL BB recipes:
Monterey Jack Turkey Burgers
Italian Turkey Burgers
Oven Fries
Lime-Broiled Salmon
Desk Set Oven-Fried Chicken (as chicken parm I think)
And this old recipe:
Sausage, Beans, and Greens (with turkey sausage--for the first time)
Tonight, since it is cool and rainy, I am going to turn on the oven and bake the last of my frozen stuffed peppers. What a good idea it was to make them in August! I am definately going to do that again this year. Served with mashed potatoes and corn, of course :) I don't think I have ever had stuffed peppers without mashed potatoes and corn! And I am trying Muir Glen's Chunky Vegetable Tomato Sauce. I usually don't like jarred sauce, but it was on sale and I want to try some of the organic ones.

Terry,
Make sure your plantains are ripe, it makes a big difference in the flavor and texure.
I haven't worked out my menu yet, but the grocery store has shrimp on sale so I'll make the Shrimp Po'Boys and DD1 has requested pizza again so that's two meals figured out.

Here's my plan:
Tonight: Ordering In
Saturday: Roast and spaetzle night, can't get enough of that! Served with red cabbage and I'm doing Barefoot Contessa's roasted brussel sprouts for the veggie.
Sunday: Baked Ziti for T and the kids, Moosewoods eggplant parmesan for me, fresh bread, and cucumbers vinaigrette.
Monday: Rum-Marinated Chicken Breasts with Pineapple Relish, garlicky brown rice, and grilled corn on the cob.
Tuesday: Buffalo chicken pasta, sauteed spinach with garlic, and a salad
Wednesday: Spiral Stromboli {Pizza for the kids} with marinara, Moosewoods roasted veggies with her Italian dressing, and a salad.
Thursday: Spice-Rubbed Flank Steak with Spicy Peach-Bourbon Sauce, baked potatoes, grilled asparagus, and a salad with chili-garlic vinegraitte.
Friday: Grilled cheese and tomato soup night.
Desserts:
Barefoot Contessa's Outrageous Brownies.

Miso Rice Pilaf
2 tsp vegetable oil
1 onion, chopped
1 1/2 cups chopped cleaned collard greens
2/3 cup medium- or long-grain brown rice
2 tsp miso
1. In a medium saucepan, heat the oil. Add onion; cook, stirring as needed, until softened, about 5 minutes. Stir in collard greens and cook until wilted, about 3 minutes.
2. Add rice and 1 1/3 cups water; bring to a boil. Reduce heat and simmer, covered, until the rice is tender and the water is absorbed, 35-40 minutes.
3. In a small bowl, dissolve the miso in 2 Tbsp water, stirring as needed. Gently stir into the rice.
Makes 4 servings (3pts each).
Per serving: 159 calories, 3g total fat, 0g sat fat, 0mg cholesterol, 112mg sodium, 29g carbs, 2g fiber, 3g protein, 22mg calcium

Ughhh... I waited as long as I could to plan next week's menu hoping to find inspiration in the June issue, but no such luck. So I draft the menu this afternoon and the magazine shows up in tonight's mail. Since I'd already done the grocery shopping, Guadalajara Burgers and other June temptations will have to wait until next week. Here's what's on tap for this week:

OMG, that's so cool. I'm a huge NPR fan (if they air it, I'll listen and like it) and earlier today caught a re-broadcast, and thought how great it would be to attend. Did you make the souvlaki (sp)? I was thinking of making it Tuesday night and wondered how it turned out:
I left my list at home but I think this is what I have on tap:
Sunday - hot dogs for kids with sliced strawberries (DH is away and I wasn't hungry)
Monday - The pasta w/ spinach, proscuitto and tomatoes, salad
Tuesday - Mother's Souvlaki, that Greek greenbean dish who's name I can't pronounce and I was going to do whole wheat couscous but now I'm leaning towards that beans w/ sage recipe that someone posted. Had them in Italy last summer and loved them!
Wednesday- the pasta w/ arugula and shrimp, salad
Thursday - pizzas - regular for the kids and I still haven't decided which toppings I'll use for DH and me.
Friday - out w/ the 'rents - we'll be visiting them for Memorial Day Weekend
Saturday - if DH gets lucky on his fishing trip, Fried Flounder, sesame noodles, and I'm thinking those marinated cucumbers and tomatoes - if he's unlucky, same menu except with some grilled tuna steaks
Sunday - out while the 'rents babysit :D

Kim, I didn't end up making it. DF wanted to grill steaks and I realized I was missing two of the more key ingredients. It's getting moved to next week now. Let me know how it turns out for you! :)

Well, I'm not Julie or Kim, but I did make the souvalkia last night (only modification was I broiled them instead of grilled them). They were very good. Only complaint was that of course the veggies didn't all cook at the same rate so the tomatoes were over cooked and the onions and pepper not cooked enough. The tzataki was okay, but I like what I buy at Trader Joes better.
I would repeat the souvalkia though.

Thanks Tyra - they're on the menu for tonight but now that I think about it, I think I forgot to buy the yogurt for the sauce :(
