I'm working on a Habitat for Humanity building project tomorrow, and I wanted to bring along something for everyone to munch on.

I could swear I made these cookies - with orange juice in the glaze - back at Thanksgiving. They're a soft, puffy cookie, kind of like muffin tops. They're good and a nice change of pace cookie-wise, but nothing outstanding.

And I know I measured correctly, but the glaze simply did not work with just 1 TBSP of milk. It required at least 3, and it made a LOT of glaze. I'd say to start with 1/4 cup of powdered sugar, add the milk & vanilla, and just make more in the unlikely event you'd need to.

Thanks for the review Stephanie - I noticed these and thought they would be better in a fall issue, but oh well. My youngest sister loves pumpkin so I might give these a try. I'll probably increase the cinnamon, since 1/2 teaspoon just won't cut it for me. Do you think any other sprucing up might make them more 'outstanding'?

I actually adored these cookies! Very moist and puffy, the muffin top description is very accurate, although actually more like a cupcake top because these are so cake like. The ratio in the glaze actually worked out just fine for me - I wonder if that's a powdered sugar measuring difference???

The only changes I made were to use soy milk and 1 egg instead of 2 whites. Kristin - I did use 1 heaping tsp of cinnamon and heaping measurments of all the other spices. If I'm making spice cookies I want spice cookies :p

Oh, I also got 3 dozen, rather than the stated 2 dozen.

We liked these! My 2 yr. old especially. They are soft and tender and definitely cakey. I also couldn't get my glaze to come together, so I added additional vanilla. The only changes I made were to use 2 t. pumpkin pie spice in place of all the spices and then also added about a 1/2 t. cinnamon and they still weren't quite spicy enough for me! I would add even more next time. The glaze soaks into these by the second day, so if you were going to take these somewhere I wouldn't glaze them until the last minute. I also think these would be great with a fresh orange glaze and maybe even some orange zest in the batter. And you can definitely get more than 2 dozen from the recipe.

I think these would make a nice addition to a fall brunch menu.

Glazed Spice Cake Cookies

Cookies:
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 teaspoon ground allspice
1/4 teaspoon ground cloves
1/2 teaspoon salt
1 cup canned pumpkin
1 cup packed brown sugar
1/4 cup butter -- softened
1/4 cup fat-free milk
1 1/2 teaspoons vanilla extract
2 large egg whites
Cooking spray
Glaze:
3/4 cup powdered sugar
1 tablespoon fat-free milk
1/4 teaspoon vanilla extract
1 Dash ground cinnamon


Preheat oven to 375`.

To prepare cookies, lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 6 ingredients (flour through salt); stir well.

Combine pumpkin, brown sugar, and butter in a large bowl; beat with a mixer at medium speed until light and fluffy. Add milk, vanilla, and egg whites; beat well. Gradually add flour mixture to pumpkin mixture; stir until combined.

Drop dough by heaping tablespoonfuls onto baking sheets coated with cooking spray. Bake at 375` 10 minutes or until almost firm. Cool on pans 1 minute on a wire rack; remove from pans. Cool completely on wire rack.

To prepare glaze, combine powdered sugar, milk, vanilla, and cinnamon; stir well with a whisk. Dip tops of cookies in glaze. Place cookies, glaze side up, on wire racks; allow to set.


NOTES : Yield: 2 dozen cookies (serving size: 1 cookie).

OMG! These were fantastic!

I followed Emily's mention of 1 tsp of cinnamon, and heapings of the other spices.
