View Full Version : Asiago Cheese Sauce

I just made Chicken and Pasta bake with Basil from the magazine and it calls for Asiago Cheese Sauce. I had the hardest time melting the cheese. I did it in the microwave with a little bit of milk to prevent lumps but it still wouldn't melt smoothly…just one big glob. What is the best way to have done this? It's in the oven now…hope it's good!!!

I made that a couple of months ago, and it turned out very good! My cheese melted very easily in the warm flour and milk mixture. I grated it first, with one of those Zyliss graters. It grates very finely. Could that have been the difference?
Sorry you had a problem, but I'm glad you wrote about this. I either missed it in the magazine or forgot about it, but it sounds wonderful. I'm going to have to go take a second look. Let us know how it turned out and whether you also grated the cheese.
