I made this recipe from the Good Carb Cookbook last night. It was very easy to make. It was hearty and very tasty. The only change I would make when I make it again will be to add a teaspoon or so of salt.

Beef and Barley Skillet

Amount Measure Ingredient -- Preparation Method

1 lb lean ground beef -- (95%)
1 1/4 c sliced mushrooms
1/2 c chopped onion
1 1/2 tsps dried thyme
1/4 tsp ground black pepper
1 c barley
2 1/2 c water
2 1/2 tsps instant beef boullion granules
1 c frozen green peas -- thawed

Put the ground beef in a large, deep, nonstick skillet and cook over medium heat, stirring to crumble, until the meat is no longer pink. Drain off and discard any fat.

Add the remaining ingredients except for the peas and bring to a full boil over high heat. Remove the skillet from the heat, cover with aluminum foil, and bake at 350 for 55 minutes.

Carefully remove the foil (steam will escape), and stir in the peas. Add a little water if the mixture seems dry. Place the foil back over the skillet and return to the oven for 5 additional minutes, or until the barley is tender and the peas are heated through.

Thanks for these reviews from The Good Carb cookbook. I went out and bought the book based on a couple of your earlier reviews. This recipe was one I was considering.

Val, do you think I could you a cast iron skillet since this has to go in the oven? They are the only skillets I have that don't have wood or plastic handles.

I don't own any cast iron, so i don't know the answer to your question.

But one way to solve you problem is to do what I did -- I pored the mixture into a glass 13x9 baking dish and covered that with foil. you could use any similar-sized casserole dish or baking pan.

Hi there!

Made this last night...yummy good quality comfort stuff! I used the beef granules but subbed mushroom broth for the water to impart a tad more flavor. I also used broccoli florets instead of peas :D

I would make it again for something extremely easy, filling & nutritous!

need some help with this recipe please....

i wanna make this tonight and i hope my hubby likes it since he likes barley and ground beef....i might have to make the onions into big chunks so he can easily pick out

but question...

the only barley i have on hand is the quick cooking barley...will that work in this recipe?

and greysangel --- how was it with the broccoli? i think my hubby doesn't like peas but likes broccoli...

did you put in the broccoli when you were supposed to put in
the peas? did you cook the broccoli in advance to make sure
it was cooked through?

I think I used frozen/thawed florets so I did put it in at the same time indicated. If you are using fresh, I would cut them up so they are nice and small and maybe give it five more minutes?

Do you think using ground turkey instead of ground beef would be an OK sub???

regular barley...I only rinse..no soaking :D

I usually do my barley concoctions by sauteeing onions and garlic with whatever spices and a little olive oil. Then I add barley and a little liquid (broth/diced tomatoes/wine), then I just keep adding broth a bit at a time until the barley is cooked and it's nice and creamy. Sometimes towards the end, I'll add in whatever veggies I want to add to it...spinach, peas, cut up string beans etc...

thanks for your help...I've been trying to test out a bunch of recipes for my picky eating DH....

well I made this last night for my cutie hubby and I...

I really liked it but then again I just love ground beef/barley/mushrooms/onions...but then again I really love any kind of food!

My DH has some very particular tastes....I really thought that he might like this but he said it was just ok and only ate a little portion out of sweetness hahaha....maybe if the barley wasn't such a main part of the dish? And I think he was thrown off by the ground beef in there (I think he only likes ground beef as a hamburger or in spaghetti sauce)....He really has some interesting picky tastes.


so we stopped by 7-11 and picked him up a couple of hot dogs...

*sigh*...hehehe at least I have a yummy lunch for today that I know will smell so so good when I heat it up and make the whole work crew jealous! =)

oh wells...it was worth a try...only one winner so far with him...the baked ziti!

Thanks, Val, for posting this recipe. DH and I really enjoyed it. I used pearl barley, and, like Jeanne, subbed fresh broccoli for peas. For some reason, the beef-mushroom combo seemed just the perfect comfort food for a cool fall evening. Very quick and easy to make.
