I LOVE raw onions, but they give me heartburn. I learned awhile back how to solve this problem when making salsa:

Chop the onions and put them in enough lime juice to cover them. Let them soak for 15 minutes (or longer). The lime juice "cooks" the onion, plus gives great lime flavor!

Thanks for such a great tip! We usually make our own salsa and often wondered how to make the onion less bitey. After it sits for a day or two (if it lasts that long...), the onion seems to mellow out. But I'll definitely use your suggestion next time.

Great tip!

Here is another one that works. Rinse the chopped onion in a collander under hot running water for about 30 seconds. This rinses away some of the volatile oils and makes the onions taste milder.

I got this tip from a Salsa cookbook by Mark Miller.
