You didn't miss 'em! Here it is...let me know how you like them. I'm not much of a fan of plain old cottage cheese, but these are something else!

Cottage Cheese Pancakes

1 cup cottage cheese
3 eggs
1/3 cup flour
pinch salt
2 TBSP sugar
2 TBSP melted butter
1 tea baking powder
1/2 tea vanilla

Place all ingredients in mixing bowl, beat with fork. Do not overmix. Pour batter on lightly greased (or use cooking spray), preheated griddle. Turn when bottoms are golden brown.

**This is a good amount for 2 hungry adults so double accordingly!**

Hi Deb. the recipe looks great, will have to try it this weekend. I never thought about adding the cottage cheese to the batter but usually mix it about half and half with yoghurt, add fruit, and roll the pancakes around it.

whaaa! i tried to make the CC cakes and here's what happened...

i tried a calphalon non-stick AND a cast iron skillet AND 3 different spatulas! i couldn't flip the cakes at all... the top was too sticky and kept oozing onto my spatula when i tried to flip. i finally resorted to the frittata method of putting it in the oven.

do i need an actual griddle? also, do you use a metal spatula or non-stick? have you had this problem before?

the bits that i tasted were yummy... i'd love to have an actual stack of cakes!

Do these pancakes taste like cottage cheese or is the cheese used as a fat replacer? I don't like cottage cheese, and I noticed there isn't much flour, so I was wondering what these taste like? Thanks!

no... they don't taste like cottage cheese at all... they are almost crepe tasting with a hint of sweetness...

Any thoughts about substituting ricotta for the cottage cheese??

IMHO you do not need a griddle. I have learned w/ pancakes that the pan/griddle needs to be HOT. A non-stick skillet w/ a good thin plastic spatula works well & depending on the size of the pan or preference, make the sizes you want-not necessarily what the recipe says. I still have trouble mastering the flip but, only flip them once and don't mess w/ them. Pry a corner up to make sure they are golden on bottom, edges look dry and it's bubbly in the center & then flip over & don't touch or press on top of them. It may take a few batches to learn the way you want them http://www.cookinglight.com/bbs/wink.gifbut it is worth it. I absolutely love pancakes & make them all the time. Good luck!

Geez!! Take a few days off for my class and my anniversary and everyone misses ya! Thanks Andrea, Shelly, and all for making me feel sooo wanted!

Andrea, I personally use a non-stick griddle. I just made them this past weekend and sprayed the Pam. Didn't have any problems flipping, BUT be sure they are golden, golden brown on the bottom BEFORE trying to flip. If they aren't done enough they are harder to flip and probably will fall apart (how disappointing!). These pancakes WILL NOT bubble in the center, so don't be waiting for that to happen!

Shelly, I can not eat cottage cheese! Plain, with fruit or anyway and I LOVE THESE! They do retain a little bit of the cottage cheese "texture", so if it's a "texture" thing with you then you may not like them! I like the fact that there is only a little flour. Although they are "pancakes", they won't lay on the bottom of your stomach (Unless you plain old eat too much!)! I hope you try them!

As far as substituting ricotta, I've never found a need to. I like them just the way they are. The ricotta may make them seem more like a main dish rather than a breakfast. This may be a good thing for some??!!

I finally got around to trying these. They are very good, but are they a breakfast kind of pancake or something else. I made them for breakfast just because they are pancakes and put a bit of maple syrup on them. Suggestions on how you serve them and with what. It's a good protein source for breakfast for sure.

Norma, my mom has always made these as a "breakfast" food, serving them with syrup or fruit spread (jam). That is how I've always done it also. Occassionally I use it for a "dinner", but mentally think I'm eating a "breakfast food". I think the idea for ricotta cheese puts it into another category...maybe more as a side dish for dinner?? I'm glad you liked them though!!

We tried these this morning in order to use an old container of cottage cheese. We really enjoyed them. I doubled the recipe, but only used 3 whole eggs and 2 egg whites. They turned out delicious!
