In one of the last couple issues of Self magazine there was a chocolate chip cookie recipe that had BEANS as an ingredient. I'll dig it out and post it if anyone is interested. But this is one that is just too darn experimental for me without some feedback first. Did anyone see it? And if you did anyone brave enough to try it?

Bossy, haven't seen that cookie recipe in Self, but I once conned folks into trying a brownie recipe from the cookbook "Stealth Health," that had a l5 oz. can of black beans (pureed) in them. Sneaking in fiber was the point--the brownies actually weren't inedible, did have a beanie aftertase, BUT PEOPLE WERE NOT AMUSED BY THE DECEPTION! You might want to inform tasters upfront! Haven't used that book much since...altho it does have a nice clam chowder recipe (for sneaking in iron).

Let us know if you give the cookies a "peas" of your time!

Haven't tried the recipe either but a friend gave me some bread at Christmas she called Picnic bread, it had baked beans in it (pureed). The taste was fine but the bread was a bit dry. None of the boys would try it after hearing about the beans!

Depending on the bean source, I would actually consider trying it -- there are lots of good dessert recipes out there which utilise tofu (bean curd) and taste wonderful! So, beans don't necessarily ruin a recipe or leave a strange taste in your mouth.

I'd say, Give it a try http://www.cookinglight.com/bbs/smile.gif

I have had brownies made with black beans before, and they were really good!

I haven't tried this recipe, but a friend of mine from Albuquerque, NM did tell me she regularly ate pinto bean fudge growing up. (I'm not kidding, she showed me the recipe.) So I guess depending on where you're from, it's not an entirely unprecedented idea. Don't know if I'd try it, though...I'd probably just make oatmeal chocolate chip cookies or a recipe with bran if I wanted to sneak in fiber.

Haven't seen this, but would try it. I took a cooking class last year where one of the dishes was a hot vanilla pudding made out of beans (can't remember what kind). It was really good, although a bit lumpy.
