Hi... I was wondering if anyone has any good recipes for light or not so light corn pudding.

I haven't made this yet, so I don't know if it's any good. It's more of a spoonbread than a pudding. It calls for plain sourcream, but I usually successfully) substitute low-fat or fat-free in any recipe calling for regular, so give it a try http://www.cookinglight.com/bbs/smile.gif
You could also use 4 egg whites, or 1/2 cup of egg substitute instead of 2 eggs.
1 (8-1/2 oz) package corn muffin mix (jiffy)
1 (8 oz) can cream-style corn
1 (8 oz) can whole kernel corn, drained
1 (8 oz) container sour cream
1/2 cup butter or margarine, melted
2 large eggs, lightly beaten
Stir together all ingredients; pour into greased 11 x 7 inch baking dish
Bake at 350 for 35 to 40 minutes or till golden.
