I know most all of these recipes have threads with reviews on them, but I am just too lazy this morning to look all of them up. Please excuse me this time.

Shrimp Po' Boys with Spicy Ketchup and Corn Salad-This was Fri. night with DS1 and DS3 here with us. Everyone raved and one even went back for more. But also let me say that I served them a whole sandwich and the recipe said that a serving was only half a sandwich (yeah-right ) :p . They will make me make this again.

Sat. night DS1, DS3, and DS4 were here plus several of their friends and DGD, ex-DIL and her mother-my version of Grilled Margarita went off like clockwork. Nice and moist and a nice little kick to it. As sides I had, KimKelly's Black Bean and Pineapple Salad with Orange Chipotle Vinaigrette which is wonderful. I have made this several times, and always get raves. The Spicy Hashbrowns (10/96) were also well received. I made them even spicier by using chipotle chili powder. And the finale was Margarita Angel Cake. Those who tried it loved it (me included), but most were too full for dessert. (I had made fresh salsa from tomatoes from the garden and some indulged heavily before dinner.)

All the DS's went back their separate ways and it was just DD, DH and I for Pastitsio, which was fairly easy to make and was pretty good. I agree with other reviews-it needed something-but was still good as it was. DD loved it and asked for seconds (which is rare). I also made the Fashoulakia, which I thought was excellent and the other liked well enough. It was easy to put together and an excellent change of pace from plain ole green beans.

Mmmm, thanks for the reviews. I'd missed the black bean salad when it was posted, but now I've got in Mastercook as a "to try" recipe. :)

Mom's Grilled Margarita Chicken

Serving Size : 8 Preparation Time :0:00

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
8 skinless boneless chicken breast halves
Margarita mix (such as Mr & Mrs T), to
cover
1/2 cup tequila
4 cloves garlic, minced
2 jalapeno peppers, seeded and minced
2 limes, juiced
1/2 cup chopped cilantro
1 1/2 teaspoons chipotle chili powder
3/4 cup cumin
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Place chicken in a large container. Pour the margarita mix over the chicken to completely cover. Add the remaining ingredients and toss to combine. Cover and marinate in the refrigerator 8 hours or overnight. Then grill.
