Just wanted to share one of our favorit breakfasts:

I toast tortilla chips in a cast iron skillet, then add onion, corn and beans(black are our fav) and saute until cooked. While this is going on, I beat eggbeaters or egg whites with salt, pepper and cumin, then add to the mixture. I add the eggs to the skillet and scramble until set. I put them on plates and add a touch of 2% sharp cheddar, shredded, to the top. Add salsa if desired.

Sorry their arent any measurements, but I just kind of wing it. It is our favorite weekend breakfast!

That sounds yummy! Do you leave the chips in along with everything else or take them out and serve them on the side?

I've had a similar recipe at our favorite Mexican restaurant. They scramble with the tortilla chips included in the pan!

The chips are mixed with everything...you dont even know they are there because they arent crunchy anymore, but the add a GREAT flavor!

You would be right, except Ive only lived here a year and a half...Im from IN where potroast with carrots and potatoes w/o flavor are a delicacy (not to insult Hoosiers, but that is what I grew up eating - Yuch! http://www.cookinglight.com/bbs/tongue.gif )

That's basically a variation on Migas. Yummy!

BTW, have you seen the C&W frozen black bean and corn salad mix? It has celery and maybe some onion in it with the beans and corn. It's a great addition to salsa, spanish rice or dishes like the one you made. Randall's carries it here.
