I love this recipe but can't locate it. I'd really appreciate it if anyone out there has it!:)

Here you go!

PIZZERIA PEPPERS

2 large green bell peppers (about 1 pound)
1/2 pound Italian-flavored turkey sausage
1/2 cup chopped onion
2 garlic cloves, minced
1/2 cup sliced mushrooms
1 T grated Parmesan cheese
2 T sliced green olives
1/2 t dried Italian seasoning
1/8 t salt
1 (8-oz) can no-salt-added tomato sauce
1/4 c (1 oz) shredded part-skim Mozzarella cheese
2 (1-oz) sliced Italian bread, toasted

Prehet oven to 350.
Cut tops off bell peppers; discard tops, seeds and membranes. Cook peppers in boiling water 5 minutes; drain and set aside.
Remove casings from sausage and discard casings. Cook sausage, onion, and garlic in a large nonstick skillet over medium heat until browned, stirring to crumble sausage. Add mushrooms; saute 2 minutes or until tender. Stir in Parmesan cheese, olives, Italian seasoning, salt, and tomato sauce; cook 4 minutes, stirring often.
Divide sausage mixture evenly between peppers, and top with mozzarella cheese. Place stuffed peppers in an 8" square baking dish; bake at 350 for 15 minutes. Serve with toasted bread. (Serving size: 1 stuffed pepper and 1 b read slice). Yield: 2 servings

I was looking for a way to use up some sausage I had in the freezer and found this recipe. I made it tonight for supper and thought it was surprisingly good for such a simple recipe. I didn't eat it on bread because I wanted to have dessert and needed to save up some calories.

I made it almost exactly as written except that I used garlic paste instead of minced garlic and I used quite a bit more. I also added a bit of hot pepper paste because my sausage was mild and I felt like a little more flavor. It turned out really good.
