I made this really easy and fast recipe for supper last night because it was the only recipe I found with everything on hand that could be ready in 10 minutes. It was really pretty good. A definite repeater for those times when supper has to be on the go.

It had orzo, cottage cheese, peas, chives and topped with parmesan. I added a little sour cream. I'm not sure if the recipe came from this board or elsewhere.

Cozy Orzo

When I was a child, one of my favorite comfort foods was a dish my mother called noodles and cheese. Although it was just some plain pasta mixed with cottage cheese and a little sour cream, it had a magical calming effect on me. I make a slightly more adult version now, which is a little fancier, but equally comforting.

Amount Measure Ingredient -- Preparation Method

1 pound cottage cheese -- room-temperature
1 teaspoon salt
1/4 cup minced chives or scallions
1 teaspoon lemon zest
Black pepper -- to taste
1/2 pound orzo
1 cup frozen peas
Grated pecorino or parmesan cheese for
the top

Combine the cottage cheese, salt, chives or scallions, lemon zest, and black pepper in a medium-sized bowl, and mix well.

Cook the orzo in plenty of rapily boiling water until it is tender. Place the peas in a colander in the sink, and drain the pasta right into the peas. (This will defrost the peas and cook them slightly). Shake off the excess water, transfer the orzo and peas to the cottage cheese mixture, and stir gently. Sprinkle with grated pecorino or parmesan, and serve warm or at room temperature, in bowls.

Yield: 4 to 5 servings
Preparation time: 10 minutes

Yes, that is it, really very good. I added a little fat-free sour cream because she mentioned it in the intro and it sounded so good.

I recommend it for when you need something in a hurry.

I made this for dinner tonight!

It was very easy to make. Rather than using frozen peas, I used fresh garden peas that I had gotten from my mom. They're a little more firm that they probably should be, but they are raw and didn't really "cook" a little with the addition of the orzo.

I also used a touch of lemon juice rather than the zest. Everything else as written.

My verdict is that it's pretty good. Not sure if I'd "put it on a menu" repeat it, but I would make it again if I was really hungry and wanted something fast since it was so quick to make...and would be even quicker with the frozen peas.
