Last night I tried this recipe from my Greek cookbook and the flavors were fantastic. So I thought for all of the sharing that you wonderful people do with me, I would like to share it with you......
Spicy Chicken (Kota Kapama)
4 Tbsp Olive oil
3 Lb chicken cut into pieces
2 med onions, finely chopped
3 garlic cloves, minced
14 oz can diced tomatoes, with juice (I used a 28 oz can)
3 tbsp tomato paste
1 cup white wine or water
1 lemon, juice of
1/2 tsp sugar
1/2 tsp cinnamon
1/2 tsp cloves
3 Bay leaves
salt and pepper to taste
Heat Olive oil in a saute pan or a deep sided skillet over medium heat. Brown the chicken on both sides and transfer to a platter. Add onions and garlic to oil remaining in the pan. Saute until onions are tender. Stir in tomatoes with juice, tomato paste, wine or water, lemon juice, sugar, cinnamon and cloves, bay leaves, salt and pepper. Return chicken to the pan and simmer covered with lid slightly askew for 1 1/2 hours. Serve with potatoes, rice or pasta and grated cheese.
I served mine with the spinach, feta, and rice pie, Go figure!!
