Take a baking potato or two and slice them thin like McDonald's fries. Toss them with an egg white, some salt and sometimes cajun seasoning. Place them in a single layer on a cookie sheet sprayed with pam and bake for about 20 minutes at 400. I usually flip them halfway through.

Alternately, I roast any and all types of potatoes with a little salt, about a tablespoon of olive oil and whatever spices I feel like tossing in. They take about 45 minutes at 425. I do sweet potatoes, beets, yams and turnips this way too.

I don't have a favorite recipie, but homemade fries turn out great for me when I bake them on my pizza stone!

I like to take two to three potatoes and microwave to 1 minute, flip over and microwave for another 1 minute. Next pour tbsp. of melted butter/maragine over the sliced or cubed potatoes. Sprinkle with onion powder, garlic powder, black pepper, papirka and parmesan cheese (1 tsp.). Toss and repeat the spices and cheese. Bake at 375 for about 20-25 minutues. This serves 2-3 people.

I love an old recipe from Eating Well Magazine - cut up peeled sweet potatoes and Yukon gold in cubes - bite size. Toss with olive oil, salt, pepper, paprika and roast on a sprayed cookie sheet at 450 for 20 minutes - turn and finish (maybe 10 minutes more). These are so good, even if you're not crazy about sweet potatoes, the mixture is a good one.

I take a large baking potato, unpeeled and slice it into medium/thin strips and toss it with a little olive oil and coat with paprika, seasoned salt, celery salt or essence and bake for 10 minutes at 400. I then turn them over and bake for another 10.

We like to have these while watching videos with a side of lf ranch or catsup.

I quarter small red potatoes and spread them on a cookie sheet. Spray with olive oil cooking spray and bake for about 30 minutes at 450. Turn them once after 15 minutes and sprinkle with garlic powder and seasoned salt. We love these.

I usually cut up red potatoes in small pieces, mix with olive oil and lots of Tony Chachere's seasoning and sometimes Mrs. Dash, and bake at 350 for around 35-40 minutes. Easy and one of my favorites to go w/ burgers, French dip sandwiches, etc.

when i do oven fries i either take left over baked potatos (and when i bake potatos i cut the potato in 1/2 and place a chunk of green pepper and onion inside, wrap in foil and bake in the oven or on the grill, then the potato is flavored w/pepper and onion) and cut up into small pieces spray w/pam and sprinkle w/garlic and onion powder then broil them to crisp, or if the potatos are not cooked yet i cut, spray and season then microwave to cook, then place under the broiler to crisp. Sweet potatoes make great oven fries. I just brush with olive oil or spray with Pam and then serve with a dipping sauce (salsa or BBQ), but I am sure any of the above suggestions would be good, too.

I use a recipe from CL from several years ago...it was a cover story (dont remember the year off hand), but one change, I microwave them first. I HATE potaotes that arent done inside, so I cook first, then put in the oven to make crispy http://www.cookinglight.com/bbs/smile.gif
