The jury is still out on this one. I left out the prosciutto, cause I didn't have any, and don't like it very much anyway. The salad was good, but it was sort of strange. I guess it's just me, but I found it weird to have balsamic vinegar on melon. I really don't understand myself:rolleyes: , cause I like that type of dressing on other fruit salads :confused: . We had this as a side to the Asian Turkey Burgers from the latest Eating Well. Now that was a very good burger :D ! The DD tried to talk me into letting her have a second whole burger :eek: (I'll let her have it for lunch today)

Asian Turkey Burgers

2 slices whole-wheat sandwich bread, crusts
removed, torn into pieces
3/4 pound lean ground turkey breasts
1 (8 ounce) can sliced water chestnuts, rinsed and chopped
2 tablespoons hoisin sauce
2 scallions, trimmed and sliced
1 tablespoon minced fresh ginger
2 cloves garlic, minced
1/4 teaspoon salt
1 1/2 teaspoons toasted sesame oil
1/4 cup Sesame Mayonnaise
Sesame Mayonnaise:
2 tablespoons reduced-fat mayonnaise
2 tablespoons nonfat or low-fat plain yogurt
1/2 teaspoon reduced-sodium soy sauce
1/2 teaspoon toasted sesame seeds

Heat grill to medium-high.

Place bread in a food processor and pulse into fine crumbs. Transfer to a large bowl. Add ground turkey, water chestnuts, hoisin, scallions, ginger, garlic, and salt; mix well. (The mixture will be moist.) Divide the mixture into 4 equal portions. Form into 1/2-inch-thick patties.

Oil grill rack. Brush patties with sesame oil. Grill until browned and no longer pink in the center (165 degrees), about 5 minutes per side.

Meanwhile, prepare Sesame Mayonnaise to serve with the burgers.

246 cal, 7g fat, 56mg chol, 21g carb, 24g pro, 4g fiber, 498mg sod.

Mayonnaise: Combine all ingredients in a small bowl; whisk until blended.

Yield: 1/4 cup (per tablespoon) - 31 cal, 3g fat, 2 mg chol, 2g carb, 0g pro, 0g fiber, 71mg sod.

Had this tonight as a main dish salad and thought it was wonderful!

I did make a couple changes so it could serve as a main dish. I doubled the dressing portions & drizzled it over the rest of the ingredients which I just combined in a large bowl. I added a can of cannelini beans & really didn't measure any of the main ingredients!

Also, instead of baking the prosciutto, I grilled it! (As hot as it's been, I wasn't about to turn on the oven, even if it was for only 6 minutes!). I greased the cooking grate really well & made sure it was thoroughly clean so the prosciutto wouldn't stick. Grilled it about 3 minutes a side & IT TURNED OUT DELICIOUS! Can't explain the flavor from the grill, but definitely different from regular prosciutto and also bacon.

And Terry, I think balsamic vinegar is what's ideally mixed with fruit, particularly melon. And combining it with prosciutto is authentic Italian.

Glad to see reviews on this recipe. I have been considering making it, but wasn't sure how it would turn out. Now I think I'll give it a try.

Really? I heard of the prosciutto wraped around a melon slice, but have never tasted it. Hum, learn something new every day. It was new to me so maybe I should try the combo again, and with the prosciutto!

Made this last night and thought it was terrific. I'm usually not a prosciutto fan but it was very tasty after baking it. Almost like adding crisp bacon to a salad. Like the dressing with the melon also.
