I'm trying to decide whether to make the chipotle tamale pie or the chiles rellenos casserole (both from Jan/Feb 01)...anyone made either of these have an opinion?

I haven't made the tamale pie yet, but the rellenos casserole is quite mild. Much too bland, in my opinion, but others have said it's good as a "comfort food" casserole. Since the tamale pie includes chipotle, it will have much more kick. Does that help you decide?

I didn't have the refried beans needed for the chili relleno..though I could have mashed my own pintos, so I'm in the process of making the chipotle...I'll let you know how it is.

I just made the Chili Relleno Casserole, and while we thought it was bland; there is plenty of room for improvement. I think that way with all mexican food. I plan on making it again, and adding a little chipotle, along with more hot sauce in the recipe. I think having the salsa (hot) and sour cream on the side helped immensely. We also added tabasco at the table. Definitely too bland per the recipe, but could be awesome with a little help. Was very easy to make which is always a plus for me. LaurieC

Ok, last night I made the chipotle tamale pie and my husband and I both give a thumbs up!! Now I'll confess I did make a couple of changes, but nothing that drastic, except I made it with Morningstar Farms Veggie Crumbles instead of hamburger meat because my husband's vegetarian. It didn't change the taste or texture...actually I couldn't tell the difference went mixed into the pie and I do eat meat!! We topped this with sour cream to help cool it off since it was a little spicy (in a good way!). The only thing I might change is next time I don't think I'll add the cilantro the topping as well as the meat mixture...it was a little overwhelming for us...of course I didn't really measure it out very well, so I could have just used to much. BTW, I halved this recipe and it was still enough for 4 servings with a big salad.
