I wish there was a begging smiley...but in absence of that, pleeeease!!! I am at work and I would like the recipe for Pasta and Fagioli that appeared in one of the late 2000 issues. It had turkey sausage in it, and I think it was one of those 30 minute recipes. I have to go tutoring my student tonight, after work, and I need to know if I have all the ingredients on hand! My dear husband noticed the turkey sausages in the freezer and now he wants them. I can't hold him off any longer....aaaarghh!

Here you go. Sorry this took so long but I had to type it in.

We thought this was tasty and quick--a definite repeater.

Pasta e Fagioli (10/00)

1 tbsp olive oil
6 oz hot turkey Italian sausage
1 1/2 tbsp bottled minced garlic
1 cup water
1 (8 oz) can no-salt-added tomato sauce
1 (16 oz) can fat-free, low sodium chicken broth
1 c uncooked small seashell pasta (4 oz)
1/2 cup grated Romano cheese, divided
1 1/2 tsp dried oregano
1/4 tsp salt
1/4 tsp white pepper
2 (15 oz) can white cannellini beans or other white beans. I used Great Northerns, which I prefer to cannellini because they do not fall apart.
minced fresh parsley (optional)
crushed red pepper (optional)

Heat the oil in a large saucepan over medium-high heat. Add sausage and garlic, saute two minutes or until browned; stirring to crumble. Add water, broth and tomato sauce; bring to a boil. Stir in pasta, 1/4 cup cheese, oregano, salt, pepper and beans; bring to a boil. cover, reduce heat and simmer for about eight minutes, or until pasta is done. Let stand five minutes and sprinkle with 1/4 cup cheese. Top with parsley and red pepper, if desired.
