View Full Version : Favorites from the 30 minutes or less section?

We are starting up a Recipe Club with my moms group and the theme for November is "Quick and Easy" - to give us ideas for getting through the holiday madness. I tend to skip over CL's 30 minute or less category for some reason and wondered if you all had any favorites? Please share! TIA. Oh and perferably no seafood recipes - one of the moms in the club has a seafood aversion - darn!

I believe the Ham & Swiss Loaded Potatoes recipe is from the 30 minutes or less section (April). It's pretty yummy and gets repeated because it is quick. I did alter the recipe because we found it too bland - added garlic powder and have considered using a sharper cheese (such as gruyere) and I always sub low-fat for ff sour cream.

Another quick dish that's been on my mind today since I had it last night is the Mexican Bulgur Salad with Citrus-Jalapeno vingaigrette. The bulgur soaks for 30 minutes and it takes me just that amount of time to chop the ingredients and mix up the dressing.

I'll second the loaded Ham and Swiss potatoes and add the Monte Carlo sandwiches, the roasted bell pepper pesto pizza (from Oct), and the bbq pork chops (not from 30 minute section, from diner section in April).

I have looked through all of my CL 2000 issues and will list below the 30 minutes or less recipes I have tried and liked, (sans fish).

March 2000
Curried Chicken with Couscous - It's been awhile but I wrote "yummy" next to it.
Pork and Pineapple Stir-Fry

April 2000
Ham-and-Swiss Loaded Potatoes - I tried these and we really liked them.

May 2000
North African Chicken and Couscous - My husband especially liked this one.

July 2000
Indonesian Coriander-Honey Chicken
Thai Steak Salad with Basil and Mint

August 2000
Was there a 30 minute section in this one????

I've also made the Indonesian Coriander-Honey Chicken and liked it and would repeat - just haven't yet and didn't recall that it was quick.

We like the Curried Beef with Potatoes and Peas (June 2000), and all the wrap recipes from that issue too. I love the Pepper Steak with Gorgonzola Cheese ones, the Ginger Peanut wraps, and in fact tonight, we had the Spicy Ranch Chicken Wraps for the first time - they were done start to finish in less than 20 minutes, and it was a definite keeper!!! Really good. They tasted so fresh - I used fresh jalapenos from the garden and fresh parsley and tomatoes from the garden too. MMmmm. My husband loved them.

I too, am paying more attention to the 30 minutes or less section, as I have of late only been cooking on the nights I have "time" - most of my recipes are relatively long and involved, and so I've sacrificed cooking and eating healthy when I've been short on time or energy. But these recipes have been surprisingly great, so I am planning to go back through my issues and find some other new ones to try! I'll be watching this thread too, for everyone else's input....

yes these pork chops are tremendous, i have cooked them so many times i have memorized the recipe!!AND talk about quick

I'll second the vote for the monte christo's. They taste really delicious and are very very easy to make.

The tuna melt from September 2000 -- even made it in the toaster oven. And (although this is seafood) the tuna puttescna (sp!) from one of the spring issues this year -- it's a recipe I make frequently.

Thank you all for your suggestions so far. I spent part of the evening thumbing threw some of my old CL's - I guess that's the disadvantage of Mastercook - you lose the category that they orginally fell under in the magazine, so it's hard to pull out the quick and easy from Mastercook.

I have some ideas, but I always like to hear about the tried and true before I start experimenting. It's also hard when you're sharing recipes with other families, all with different tastes!

We also loved the BBQ Pork recipe, but we find that we just make the sauce and put it on portobello mushroom caps and then grill them. They're fantastic. Also it's great on sea scallops...not for your dinner party, but for you!

Help! I can't find the BBQ pork recipe. I tried a recipe last night that I thought was this one, but it turns out to be something different. I tried the Chinese-Barbecued Pork Tenderloin - it's from the 30-minutes-or-less section, July 2000. It was very good (my husband really flipped for it), but I can't find the recipe you all are talking about. I don't see it in April 2000 anywhere. Thanks!

I think it's actually in March 2000--the one with the Diner/Cafe meals and the patty melt on the cover. I made it on Sunday and it was really good--served it with the sauteed apple recipe next to it. So easy--came together in about 20 minutes total.

Roasted Pepper Pesto-Tomato Pizza
Pasta e Fagioli - With the changes I mentioned in the October Review thread, (only one can of beans and regular sausage - not turkey).

Short Sharp Chops - Made these tonight and they were easy and good. They were from the freezer article in that issue. I did not freeze them so I can't say how they come out after being frozen and thawed.

I made the Polenta with Corn and Green Chili's last night from the 30 minute or less section. Unfortunatly, I'm one of those recipe clippers instead of magazine keepers and I didn't write down what issue it was in (I really need to change my organizing habits). I believe it was from a 2000 issue. Let me tell you, this recipe was excellent. I've always loved polenta but this was just to die for. Somebody with electronic version of all the recipe's should be able to find this one. Let me know if you want me to post it. Again, it was quick, easy, there weren't a lot of ingredients, and it was so good!

The Shortcut Lasagna from June 2000 is excellent also. Tonight was the second night we've had this. I am amazed how much it tastes like my traditional lasagna, but oh so much easier to make - and super fast too!

I did make a few alterations though - substituted part skim mozzarella for the provolone and substituted Hunts Italian Tomato Sauce for the plain sauce and added herbs.

GRACE, iam looking for the Spicy ranch Chicken Wraps recipe online, but cant find it! Does anyone have it on Master Cook? I saw you tried it! Oam making htis tonight (from my cl annual 01 book) but wanted to give the recipe to a friend. (being lazy didnt want to type it out! lol)

Spicy Ranch Chicken Wraps

SOURCE: Cooking Light YEAR: June 2000 PAGE: 130

INGREDIENTS FOR 4 SERVINGS:
2 teaspoons chili powder
2 teaspoons vegetable oil
1-1/2 teaspoons ground cumin
1/2 teaspoon salt
1-1/4 pounds skinned, boned chicken breast, cut into 1/2-inch strips
1/2 cup low-fat buttermilk
1/4 cup light mayonnaise
2 tablespoons minced fresh parsley
2 tablespoons fresh lime juice
2 jalapeno peppers, seeded and diced
2 garlic cloves, crushed
4 (8-inch) fat-free flour tortillas
3 cups chopped romaine lettuce
1-1/3 cups chopped seeded tomato

INSTRUCTIONS:
1. Combine the first 4 ingredients in a heavy-duty zip-top plastic bag. Add
chicken; seal and shake to coat. Remove chicken from bag. Combine the
buttermilk and next 5 ingredients (buttermilk through garlic) in a small bowl,
and stir well with a whisk.

2. Place a large nonstick skillet over medium-high heat until hot. Add
chicken, and saute 2 minutes or until chicken is done. Add the buttermilk
mixture; cover and cook 1 minute. Remove from heat.

3. Warm the tortillas according to the package directions. Spoon about 3/4 cup
chicken mixture onto each tortilla, and top each serving with 3/4 cup chopped
lettuce and 1/3 cup chopped tomatoes. Roll up wrap. Yield: 4 servings (serving
size: 1 wrap).

NUTRITIONAL INFORMATION:
CALORIES 362 (20% from fat); FAT 7.9g (sat 1.8g, mono 2.2g, poly 3.2g);

My favorite 30 minute or less is the Tuna-Pasta Puttenesca (sp.). I can't recall which issue it is from, though -- probably check the 2000 and 1999 review years. I make this frequently, and it truly is quick and easy.

The Santa Fe Potatoes from the same issue as the Ham ones are also very very tasty. Curried Beef with potatoes and peas was also very good, as well as the blue cheese steak wraps. The wraps are good for serving for company, I have found, but only really work when using high quality meat that is suggested in the recipe. I substituted one time and it came out too tough.
