View Full Version : ISO: Quick and easy bread or muffins

I'm wanting to make either a desert bread or muffins for my neighbors. We recently moved to this neighborhood, and I'd like to use this as an intro. I'm looking for a quick and easy recipe. I don't care about fat or calaories, since I won't be eating it myself (ha! ha!)!

Any suggestions?

Angela--This is the world's easiest banana bread and it is very tasty. It is from the Fannie Farmer Cookbook and has eggs but no butter. Still, it tastes rich and yummy.

3 ripe bananas, well-mashed
2 eggs, beaten
2 c. flour
3/4 c.sugar
1 tsp salt
1 tsp baking soda
1/4-1/2 c walnuts or pecans, toasted (the nuts are optional)

Mix bananas and eggs in a large bowl. Add in dry ingredients (I usually use just a smidge of salt) and stir. Blend in nuts.
Bake in a greased loaf pan at 350 for about one hour. I top it with an easy orange glaze when I make it for guests or friends--just take some powdered sugar and add orange juice till you get a glaze. Spread on top and let it dribble down the side.

Hi. I just joined this list yesterday and this is my first recipe posting. Hopefully it won't look too messy. You may decide not to make this since it really isn't the season for strawberries but I thought I'd post it anyway. I really liked it when I made it. I halved the recipe and I think I probably added more cinnamon (maybe in place of the nutmeg...can't remember for sure) It's from Canadian Living

Another recipe option is Cinnamon-Apple cake. I've heard some good things about it on this board. I don't know if it's the same one, but there's a recipe for Cinnamon-Apple cake in the "Back to the Best" section of the Jan/Feb 2000 issue.

Strawberry Tea Bread
3 cups strawberries, coarsely chopped
1 cup choppped almonds
3 1/2 cups flour
1 cup butter, softened
1 1/2 cups granulated sugar
3 eggs
1/2 tsp almond extract
2 tsp baking powder
3/4 tsp EACH baking soda and salt
1/2 tsp cinnamon
1/4 tsp grated nutmeg
3/4 cup buttermilk

In bowl, gently toss together strawberries, almonds and 1/4 cup flour; set aside.

In large bowl, beat butter iwth sugar until light and fluffy; beat in eggs, one at a time. Beat in almond extract.

Stir together remaining flour, baking powder, baking soda, salt, cinnamon and nutmeg; stir into flour mixture alternately with buttermilk, making three additions of flour mixture and two of buttermilk. Gently fold in strawberry mixture.

Spoon into 2 greased and floured 8x4 inch loaf pans. Bake in 350 oven for about 1 hour or until cake tester inserted in centre comes out clean. Let cool in pans on racks for 10 minutes. Remove from pans; let cool completely on racks.

Bread can be wrapped in plastic wrap and stored for up to 1 day or frozen in rigid airtight container for up to 2 weeks. Makes 2 loaves, 16 slices each.

Congratulations on your move! I just moved into a new neighborhood this past summer and brought my new neighbors banana bread. You're right, it's a great way to meet them and introduce yourself. But if you're up for something more seasonal, the below recipe (courtesy of a previous post from BB member Andi) is outstanding and very easy. I made it for friends & neighbors this Christmas and was asked for the recipe several times. I know it's been a hit with lots of other BB'ers, too!

(Andi's) Mom's Cranberry Bread

2 cups flour
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
1 cup sugar
1 cup cranberries (fresh or frozen, washed and chopped or halved--I use my food processor)
1/2 cup chopped nuts (I used walnuts & pecans)
1 beaten egg
3 tblsp. oil
1 cup orange juice

Sift dry ingred. together. Add cranberries and nuts. Add eggs mixed with OJ and oil, mix slightly. Bake in greased loaf pan @ 350 x one hour.

Good luck with whatever you end up making!

Wow, Acorreia, I am impressed. With our last two moves, our neighbors on either side continued to bring cooked food to us, even fresh cut fruit or veggies from their gardens! We have always been blessed with Wonderful neighbors!I felt the obligation to cook for them but we moved the first day of school, which can be a nightmare in itself without moving!We have since returned the favor.
I have a recipe somewhere for 6 week bran raisin muffins somewhere. I make the little tiny muffins and they are always a hit. Will look for them if you are interested, they are better when eaten the second day. The recipe keeps in the fridge for potentially 6 weeks, I have never gone more than two. Let me know if you'd like it. Hope that everything went well with the move!! Your neighbors are lucky to have you!!

Yes, please post the receipe for the bran muffins. I may even eat those myself...I love bran!

A combo package is a great idea! I forgot I did that before, but my motive was less noble than yours... I had made a new recipe for apple bread that my husband and I didn't like at all. I didn't want to throw it away, and I was too embarrassed to give it to someone on its own lest they think it was "the best I could do!"

That way, also, you can arrange slices on a pretty decorative plate and maybe have some left over for your own family, too! http://www.cookinglight.com/bbs/smile.gif

Eegads, Angela, I know I have the recipe somewhere. Have been looking for 1/2 hour, I will call my mom from work and have her fax it to me.
When we moved, I had a huge box filled with baskets-I could never use all of them. I put a pretty napkin in the baskets, the muffins, and emptied half the box. My husband was proud!

It does make a lot of muffins, you'll need a large bowl to mix and store. Later!

@8/24/2000 Lorili had a thread give me your muffins which had LOTS of recipes . You might want to take a look. Also if you try search and type "muffin" or "bread" you will get the Jamaican banana bread etc etc...

Here we go, I kicked my husband off the internet to get this to you tonight, he didn't mind, he is hoping that I make this recipe this weekend for him! That sly devil!

6 Week Raisin Bran Muffins

Use a very large bowl!
4 eggs
3c. sugar
1 c. oil
Beat w/electric mixer.

5 c. flour
5 t Baking Soda
2 T salt
Sift all together in separate bowl.

1 Qt Buttermilk
Add dry ingredients, alternating with Buttermilk to egg mixture,
ending with the flour mixture.

1 15 oz Raisin Bran Cereal
½ c golden raisins, I add more, up to 1 c.
Add Cereal and raisins, mix well.

Pour into greased muffin pans and bake 375 for 20-25 minutes,
watch carefully. Tiny muffin pans take a shorter period of time,I think about 10 minutes? I remove directly from the pans when warm and cool on racks. They stick if you let them sit in the pans.
May be stored for 6 wks, covered, in fridge.
