Tonight I made the fried rice recipe, exchanging the shrimp for some lightly sauteed tofu...it was really quite good! It makes a lot!! I halved the recipe and still it made 4 heaping servings. I make it according to the recipe except added some sliced mushrooms, julienned carrots and a little bit of corn. We'll be having this again!!

I LOVE fried rice...and due to the cost of shrimp, I also would cut it out. I would probably just add more veggies. http://www.cookinglight.com/bbs/biggrin.gif
