Vegetarian Cheese"steak"

I make this for the best lunch so I thought I'd pass on the idea for my vegetarian (or veggie loving) friends to try. It was a vegetarian cheese"steak" and was super easy and fast. I thickly sliced 1/2 lg. Vidalia onion, 1/2 red bell pepper and 1 large portobello, 1/4 inch sliced. Saute these in some olive oil and throw in whatever spices sound good...I used seasoning salt, coriander, and about 1/2-1 t. oregano. When it was almost done sauteing I added some vegetarian worchestershire (about 1-2 tablespoons), 2 cloves fresh minced garlic and I had some jarred jalepenos so I added 1 T. of these (I like it hot!). This cooked for about one minute more and then I put it on a large hollowed-out sub roll (I just pulled out some of the middle bread to make room for the goodies). I put the filling on the bread bottom and topped with sliced provolone cheese and broiled (openface) to melt the cheese. Top with the top of the bun and enjoy. This makes 1 BIG sandwich, so adjust accordingly.

It was SO good and from start to finish took less than 15 minutes. I'll definitely be making this when I don't feel like making an elaborate dinner.
