I made the Baked Eggplant with Mushroom-and-Tomato Sauce from November 2000 tonight. My DH and I both give it a two thumbs up! Easy and very tasty. Over the weekend I made the Butternut and Beef Chili from the Annual 2000 book. It was very good, and colorful, too.

Thanks for the thumbs up on the eggplant. I saw that recipe and wanted to try it out on my husband but he has never had eggplant and I wanted to make sure his first time won't be his last! I'll be sure to put that on next week's menu. Now if only I could get him to eat asparagus......

I added some red wine to this recipe and thought it was awesome! This one is going to become a staple.

I made this for dinner two nights ago. I added a can of diced tomatoes, drained, and one small zucchini, sliced thin, not pre-cooked. Also, spiced it up a bit with more garlic and additional Italian seasoning. It's delicious!
