What is Brown Garden Sauce

Hi! I found a recipe that calls for Brown Garden Sauce. Does anyone know what it is and where I can find it?

Garden Brown sauce is usually a vegetarian demi-glace ... you might be able to find it in your grocery store with other reductions and concentrated stocks.

There is a recipe in the October 1998 Cooking Light for Garden Brown Sauce.

Otherwise here's another good recipe:

Garden Brown Sauce (Vegetarian Demi-Glace)

Yield: 4 Cups

2 T olive oil
1 cup chopped onion
1 cup chopped carrot
1 cup chopped celery
1 cup sliced mushrooms
4 garlic cloves, halved
1/4 cup tomato paste
1/4 cup flour
1 cup dry red wine
6 cups water
2 T low sodium soy sauce
2 tsp black peppercorns
1 tsp dried thyme
1/2 tsp salt
3 bay leaves

Heat oil in saucepan over medium-high heat. Add onion and carrot; Saute 15 minutes or until lightly browned.

Add celery, mushrooms, and garlic; Cook 10 minutes.

Add Tomato Paste; saute 10 minutes or until browned.

Add flour; cook 1 minute.

Stir in wine, scraping pan to loosen browned bits.

Add water and remaining ingredients. Bring to a boil; reduce heat and simmer 45 minutes.

Strain through sieve into a bowl reserving stock. Discard solids.

Store in airtight container up to 1 week in refrigerator, or freeze up to 3 months. (For small amounts, you may want to freeze it in ice cube trays to make it easier to pull out only what's needed.)
