I've sworn off most oils and butter for a while and would like to make yogurt cheese to mix herbs in for spreads...but I can't remember how. (I've only read about it, never tried it before.) Does anyone have the directions? Thanks!

I line a colander with cheesecloth and put it over a large bowl. Stick it in the refrigerator and let it sit for several hours or overnight. That's all there is to it!

I have this "gadget" that works perfectly and is far less messy than the cheesecloth method (although that method certainly works). You can put this whole thing into the fridge for draining - it has a plastic lid - and then the whole thing goes into the dishwasher for cleaning. It's not something I use every day or anything, but I love having it around when I need it.

Cool -- thanks! I'll have some dripping (the old fashioned way) overnight. I don't have cheesecloth, but I think I read somewhere that a coffee filter in my strainer will work. :D
