Help! I can't find an ingredient needed to make a Cheese torte. The ingredient is called Baker's cheese, or dry cottage cheese. I don't know where to look. Is there an appropriate substitute? Regular cottage cheese doesn't work at all. Any suggestions?

I've seen dry cottage cheese in with the regular cottage cheese and some supermarkets. Did you ask the store manager?

From the Wellness Encyclopedia of Health and Nutrition:
Farmer cheese also called hoop, pot, or bakers' cheese.
If cottage cheese is placed in a form and the liquid pressed out, it produces a firm, rather grainy white loaf, very low in fat with a mildly tart flavor. Farmer cheese can be sliced or crumbled, and is a good baking ingredient.
Cook's Thesaurus www.foodsubs.com/Chefresh.html (http://www.foodsubs.com/Chefresh.html) also says you can make pot cheese by draining cottage cheese until most of the liquid has drained out.

in which event maybe farmer's cheese or pot cheese might work??
May I also refer to you Cook's Thesaurus to check if anything listed sounds like something you might be able to use.

I have found Farmer's cheese in places where latin products are sold. I did not know it was called Bakers cheese too.I must say its not easy to find but last time i found it in a Mexican area grocery. We pan fry it or use it in almojabanas wich is rice flour fritters.

Dry cottage cheese is available with the other cottage cheeses in the dairy section, though it is usually packaged in a plastic bag and not a tub.

I'm not sure where you're writing from, but Trader Joe's (if you have one) often has Farmer's Cheese.
