I discovered that I can use my tartlet pans when baking brownies, so instead of having one pan of brownies, I have 24 tiny brownie cupcakes. No cutting, and easier portion control! Yay!

I finally made CL's Pecan Tassies the other day, (the only reason I have the pan in the first place) and enjoyed using the pan so much that I tried this with my favorite brownie recipe. Worked like a charm.

Now, of course, my brain is working feverishly to dream up yet another something to bake. Mini-chess pies? Mini-cheesecake? Mini-cupcakes? Hmmm ... . The mind boggles. :)

Discovered anything new lately?

I have used the mini tartlet pans for mini cheescakes and I've used mini muffin pans and regular muffin pans. I really prefer the mini muffin pans though because I freeze them and then have even more control over how much I eat.
I also like using the muffin pans (regular size) for individual meatloaves. I make extras and then freeze for the DSs when they're on their own for dinners.

Those are great ideas! I am soooo uncreative, and I've always been disappointed with that fact. But a fact it is.
Here are two gifts I've used in ways they weren't intended:
A big (4"?) garlic-shaped piece of thin rubber with a rough texture: The purpose is to roll garlic cloves in it to remove their skins. Well, I use the ol' whack-with-the-side-of-a-knife method....but that thing is GREAT for gripping tight jar tops that won't come off!
I got Emile-Henri (is the name right?) ramekins that are very nice, but quite small and there are only two of them. One now sits atop my flour canister and holds about 1/2 cup or more of kosher salt for quick access...now, what should I do with the other ramekin?

I have tart pans and I used them today to make individual pie crusts for a chicken dish that I took to a ladies' church fellowship. I think individual key lime pies or quiches would be nice. I bought the refrigerated pie crust that comes in rounds. I was able to get 3 tart shells out of each 9" round.

Down South, I could just buy mini tart shells at the grocery store. I haven't found them up here.

I use my pasta insert as a colander or steamer :D

Canice, you could use the other ramekin for a little food prep bowl. I mean, like when you are chopping up or measuring out ingredients, you could use that ramekin.

I have a question, Little Bit. what does r/o stand for? can't figure that one out!

Oh, oops! Guess I post at too many different forums, lol!!

r/o in a subject line usually means 'read on'

Some forums are sort of clunky, and it's easier to just use the subject lines alone for posts. If you have more to say, put r/o at the end of the line, if not, put nt (no text) or nm (no message) so people don't bother clicking the post to read further.

Here's a few forums that are set up that way, just for an example:

hth!

P.S. http://www.acronymfinder.com is also useful for interpreting things. :)

Interesting. Thanks for the explanation.

but do you know what r/o stands for? I had heard of the nt before.

(I looked it up on the acronym finder and none of the explanations applied.)

editing...

oh, I guess it means "read on."

Val, I was going to suggest the same thing for that ramekin! I have a set of 4. I have used them when making stir fry, for baby food, for dipping sauces for fondue. They do come in handy.

I used my little muffin pan to make cupcakes for DS's birthday at daycare. Okay, so it made 72 little cupcakes and it took a while to frost them, but I couldn't give 24 big cupcakes to 11 babies! I sent about 20 little cupcakes and they were a big hit. I think I'll continue to do that for their birthdays in the future. They were so cute!

For us medical people, r/o means rule out. So, I was a little puzzled by your subject line. :D

Thanks for the explanation.
