I wish CL would include more meatless recipes or am I reading the wrong magazine?

I agree that CL could use more meatless main dishes. However, I wanted to point out that if you're using the index in the back of the magazine, there are often meatless main dishes that are listed under "pasta", "grains", "beans", etc. instead of under "meatless". So it sometimes looks like they have less than they do. That said, I agree that I would like to see more vegetarian dishes in CL. My husband and I like to keep our diet to only one meat dish a week, and that really limits the CL recipes I can try.

CL has a vegetarian column every month and most articles will feature a meatless meal or side dish, unless the article is something like, "Roast Beef for Carnivores." You also might like Vegetarian Times.
I agree that CL could publish more vegetarian recipes but I appreciate that is not their mandate. I was thrilled when they added the Inspired Vegetarian column and find at least a few other veggie dishes each month. I applaud their efforts- things have improved in all mags for us vegetarians. Of course I really enjoy Vegetarian times. Here in Canada Canadian Living (CL) also includes meatless dishes every month. It is important that we veggies remind magazines ans RESTAURANTS that we exsist!

Actually C Light has more non meat dishes than other food magazines. But in the web there are many vegetarian web sites you can find lots of recipes.

I agree that they could do better to have more vegetarian main dishes...the Inspired Vegetarian section often feels more like side dishes instead of entrees. I know that I try lots of their regular entree recipes using tofu for chicken or the Morningstar Farms crumbles for the ground meat. Just tonight I made the spaghetti pie recipe from May 2000 (jazzed up a lot!) with the crumbles and I have to say it was delish!!

Knowing that CL has to cater to a wide audience--from true carnivores to vegans, I'm pretty impressed with the job they do. What I would like to see is suggestions for vegetarian substitutions for their dishes with meat. Would beans make a good substitution? tempeh? tofu? I'd like a little direction.

I couldn't do without my Cooking Light, but I do have to admit that Vegetarian Times is very helpful in planning full meals. Every month they have a full week's worth of quick recipes and include suggestions for side dishes (also a shopping list for everything). Hint hint CL.

Laughsandlaugfhs (love that name). I have read so much about that darn spaghetti pie I was thinking of making it with Yves just like ground. I'd love to hear how you jazzed it up . You probably are like me and can't remember details but any ideas would be most appreciated. Thanks!
