Here is a great recipe for making 'Party Pumpkin Cake Roll'. It's a fave at our house.
Hope you like it.

makes 12 servings

3 eggs, beaten 5 min. til glossy
1 c. sugar
2/3 c. pumpkin (canned)
1 tsp. lemon juice
3/4 c. flour
2 tsp. cinn. (add more to taste :-) )
1 tsp. baking powder
1/2 tsp. salt
1/4 tsp. nutmeg
1 c. chopped walnuts

for the filling:
2 pkgs. 3 oz. each cream cheese (softened)
1 c. powdered sugar
1/4 c. butter (softened)
1/2 tsp. vanilla

*Preheat oven to 375
**Grease jelly roll pan, line w/ parchment, and then grease & flour the paper

1. Add sugar to beaten eggs until thick and lemon-colored
2. Add pumpkin and juice
3. Mix dry ingr. and fold into mixture
4. Spread mix onto pan and sprinkle w/ nuts
5. Bake for 15 min.
6. Immediately turn out; using the short ends, roll into a towel and cool well
7. Beat all filling ingr.
8. Unroll cake and spread filling to 1 inch of the edges
9. Roll up again with the short ends using the towel to help press the cake at the seams
10. Cover and chill until ready to eat

Thanks! This sounds yummy. I'll share a favorite pumpkin recipe of ours.

Pumpkin Chill Chaser

1 cup canned pumpkin
2 cup water
2 cups milk
1/3 cup sugar
1/4 tsp freshly grated nutmeg
1/2 tsp cinnamon
1/4 tsp salt
1 tsp vanilla

Whisk together until frothy. Ladle into cups and microwave until desired warmth.
This is great on cold afternoons.

CORRECTION TO PUMPKIN CHILL CHASER!!!!!!

aGHHHH, I have a typo. There is only 1 cup of water in this. Not 2!!!!

No doubt the typo was caused from the stress of constantly checking the mailbox for the Jan/Feb issue. Still don't have mine either.

And how weird is it that we both are from (gasp!) Northern Idaho. Is it possible we both moved here from somewhere else and brought our culinary skills with us? I moved here from Dallas 13 years ago, but love living here and don't ever want to leave.
