View Full Version : August is here!
Wow, this is a first for me. Usually get my copy a couple of weeks after everyone else. I think they are doing a better job of getting the magazines to subscribers before they go to the newsstands.
Here are the main articles.
Cover Photo: Spicy Peanut Noodles with Shrimp
Barbecue U
How sweet it is (fresh corn recipes)
Pantry Makeover (this is what I need)
The Cooking Light Fit House
Cooking Class: All about Soy
Inspired Vegetarian: Orient Expressed
Lighten Up: Savannah Style Crab Soup

Looks interesting, now I need to look at it closer to determine what I want to try.

I can't wait to get this issue, it looks like it will be right up my alley. It's hard to believe, but I tried absolutely nothing out of the July issue, it bored me to tears almost. Peanut noodles with shrimp! All about Soy! Crab Soup! My mouth is already watering, thanks for the advanced notice.

I'm jealous too. Pesto & corn - yum yum. I guess I'll get mine when the time is right (alignment of the planets etc.)

Thanks for the preview. :) More peanut noodles?? How many variations can there be (not that I don't like them all, mind you :p)? I don't suppose you -- or anyone else with August -- feel(s) like posting that crab soup? I'm intrigued. Sounds divine!

What kinds of different tacos are featured?
Ooo, I can hardly wait! But I'm a newsstander who always does have to wait until the 22d or thereabouts. :(
Any kind soul willing to type up the index for us??? ;)
Cheers,
Phoebe

My exact sentiments. I haven't made squat from July and yes, the crab soup sounds great!

Got any recommendations? I've loved everything I've done out of it, but I haven't done enough.
The tacos are:
Shrimp Tacos (looks like shrimp, cilantro, tomatoes and lime juice)
Chicken Soft Tacos with Sauteed Onions and Apples (these look good)
Red Chile Pork Tacos with Carmelized Onions
I will post the recipe for the soup, but it will take me a few minutes. My project for the day is cleaning and rearranging the office, I am making good progress, but need to plug the scanner back in.

Yay! I liked the July issue (in the minority, I guess!), but I have been ready for a change and was just wondering when August would arrive. I live in IL, too, so maybe it will be in my mailbox tonight.
Savannah-Style Crab Soup
If the flour starts to brown too quickly, remove the skillet from the heat and stir the flour constantly until it cools.
1/2 cup all-purpose flour
1 tablespoon butter
Cooking spray
2 cups chopped carrot
1 cup chopped celery
1 cup chopped onion
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1 garlic clove, minced
1 tablespoon Old Bay seasoning
1/4 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon dried thyme
1 bay leaf
4 cups clam juice
11/2 cups whole milk
1/2 cup half-and-half
1 pound lump crabmeat, shell pieces removed
1/3 cup dry sherry
1. Place flour in a 9-inch cast-iron skillet; cook over medium heat 15 minutes or until brown, stirring constantly with a whisk. Remove from heat.
2. Melt the butter in a Dutch oven coated with cooking spray over medium-high heat. Add carrot and the next 5 ingredients (carrot through garlic), and saute 5 minutes or until vegetables are tender. Add Old Bay seasoning, salt, black pepper, dried thyme, and bay leaf; cook for 1 minute. Sprinkle the browned flour over vegetable mixture, and cook 1 minute, stirring frequently. Stir in clam juice, and bring the mixture to a boil. Reduce heat, and simmer 10 minutes or until mixture is slightly thick, stirring frequently.
3. Stir in the milk and half-and-half; cook 4 minutes. Stir in crabmeat and sherry; cook 5 minutes or until the soup is thoroughly heated. Discard bay leaf before serving. Yield: 9 servings (serving size: 1 cup).

hmmm I'm trying to think what i've made recently from there.
if you do a search for misc. reviews ...my last couple have been mostly clc stuff. The upside down apple gingerbread cake is to die for. Date scones, Chicken Marsala, Chicken Enchilada Casserole, Lime chicken with black bean salsa....
This week (no reviews yet):
Chicken Parmigiana - YUM
Beef and Broccoli in Oyster Sauce - YUM
Herbed Chicken Piccata - YUM
Tabbouleh with Chick Peas and Feta
The only one I didn't really care for was the greek burgers with feta aioli which everyone else seems to love! I think the problem is I realized I can't do mayo anymore...it was icky.

Does "clam juice" refer to vegetable juice like Clamato or is it something else?

Maybe my e-mail to CL did some good. Of course I'm sure there were others who complained too.
I e-mailed them about not getting the subscribers taken care off before the newsstands. Maybe it worked.;)

Double YUM! I love this. I think it's probably my favourite so far out of the book. I must crack it out next week and do some stuff. I'm gonna take a look at the Herbed Chicken Piccata.
Thanks for the recommendations KristinK.
Thanks for the August preview, everyone. I let my subscription run out with July, but this issue looks so delicious that I may have to buy it anyway! (Or I can just depend on you guys to post recipes. :D :D )

I got my issue today - just before I was taking the kids to the pool. I really am not impressed with much of it - with exception of the cover recipe. Since DH is away all this week, I'm not going to be making anything from it anyway just yet, so maybe that is why nothing caught my attention. I'll have to look at it later in the week.

I got mine yesterday, and I like it. But I really liked July, too, and that didn't seem to be too popular here. I think the corn recipes look especially good, as well as the Superfast and Reader Recipes sections. Oh yes, and the tacos. I guess I'm easy to please! ;)

1 T. margarine or butter, melted
1/4 cup packed brown sugar
2 cups thinly sliced, peeled Granny Smiths
1-1/4 cups flour
1 t. each of cinnamon and ginger
3/4 t. baking soda
1/4 t. nutmeg
1/8 t. each ground cloves and salt
1/3 cup sugar
1/4 cup stick margarine or butter, melted
1/3 cup molasses
1 large egg
1/2 cup plain fat-free yogurt
1/3 cup chopped, pitted dates
3 T. chopped walnuts
Preheat oven to 350. Coat bottom of 9" round cake pan with melted butter. Sprinkle brown sugar over butter. Arrange apple spokelike over brown sugar, working from center to pan to edge; set aside. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour and next 6 ingredients; set aside. Beat sugar and 1/4 cup butter at medium speed of a mixer until well blended (about 5 minutes). Add molasses and egg; beat well. Add flour mixture to sugar mixture alternately with yogurt, beginning and ending with flour mixture; beat well after each addition. Stir in dates and walnuts. Pour batter over apple slices. Sharply tap pan once on counter to remove air bubbles. Bake at 350 for 40 minutes or until a wooden pick inserted in center comes out clean. Cool in pan 5 minutes on a wire rack. Loosen cake from sides of pan using a narrow metal spatula. Place a plate upside down on top of cake pan; invert cake onto plate. Serve warm. Yield: 8 servings (serving size: 1 wedge).
