Is it possible to freeze parmesan cheese? We can buy large blocks of it (Reggiano) at Costco for a good price, but it usually dries out before we can use it all.
Has anyone ever done this?

I've frozen Parmesan and never had a problem with it. The only thing I did once was not let it thaw out properly, and when I went to shred it with my food processor, I somehow broke the blade.

Yep, I second that...you can freeze it whole or grated with no problem. It doesn't effect the taste either.
