Ok, this may be a long shot, but I was going to make a coca cola cake for my party today, but the recipe got torn in half. Can anyone save me? There is a piece of coca cola cake through my modem in it for you! http://www.cookinglight.com/bbs/smile.gif

I have never heard of this cake, but did a search and came up with these, hope it is something you can use. Good luck with the shower. (I thought the first one looked good. It is from foodtv.com)


COCA COLA CAKE
Recipe Courtesy of Dotson's Restaurant
2 cups flour
2 cups sugar
1 cup plus 1/2 cup butter or margarine
3 tablespoons plus 3 tablespoons cocoa
1 cup plus 6 tablespoons Coca-Cola
1/2 cup buttermilk
2 eggs
1 tablespoon baking soda
1 tablespoon vanilla
1 1/2 cup miniature marshmallows
3 cups powdered sugar

Preheat oven to 350 degrees. Combine flour and sugar in large bowl. In small saucepan, heat 1 cup butter, 3 tablespoons cocoa and 1 cup Coca-Cola. Bring to simmer and then pour over flour mixture. Stir well. Add buttermilk, eggs, baking soda and vanilla. Mix. Add marshmallows. Pour into 9x13 pan for 35 minutes.

To make the frosting, in a saucepan combine 1/2 cup butter, 6 tablespoons Coca-Cola, and 3 tablespoons cocoa. Bring to a boil. Pour over bowl with powdered sugar. Beat well. Spread evenly over warm cake. Let cool. Serve.

Yield: 15 servings



Chocolate Coca Cola Cake (goes naturally well with Coca-Cola Icing)
2 sticks butter
½ c. Wesson oil
½ c. miniature marshmallows
1 tsp. soda
2 eggs
2 ½ TBSP. cocoa
1 c. Coca-Cola
2 c. flour
2 c. sugar
½ c. buttermilk
1 tsp. vanilla

Combine butter, cocoa, oil and cola and bring to a boil. Add other remaining ingredients in order named.; beat well. Pour into a large greased and floured sheet cake pan. Bake in 350° oven for 45 minutes. Spread Coca-Cola icing over warm cake.
* I used 2- 8" pans instead of the sheet cake pan.

Coca Cola Icing (goes naturally well with Chocolate Coca-Cola Cake)
6 TBSP. Coca-Cola
2 ½ TBSP. cocoa
1 c. chopped pecans
1 stick butter
1 box confectioners sugar
1 tsp. vanilla

Bring first 3 ingredients to a boil; add remaining ingredients and beat until smooth. Spread over warm cake.
*For my icing, I used ½ butter and ½ shortening, eliminated the pecans. I creamed the shortening & butter together, added the vanilla, cocoa, and Coke, then added the confectioners sugar. Mix well.


Cocoa Cola Cake

2 cup Flour
1 1/2 cup Marshmallows - Minature

1 cup Margarine
2 tsp Cocoa - Unsweetened
1 cup Cola

2 Tbsp Margarine
2 Tbsp Cocoa - Unsweetened
8 Tbsp Cola
2 cup Sugar - Powdered
1 cup Nuts - Chopped


Combine flour & sugar in a large mixing bowl. Melt butter,
add cocoa and cola (not diet), heat to boiling. Cool
slightly. Pour over flour and sugar mixture, stir till well
blended. Add buttermilk, beaten eggs, soda & vanilla. Mix
well, stir in marshmallows. Pour into greased & floured 13x9
pan and bake @ 350 for 40 min., or till tests done. Frost
while hot. FROSTING: Combine first 3 ingredients in saucepan
and heat to boil- ing. Add powdered sugar and mix well. Stir
in chopped nuts.

A very good, and unusual, cake


Coca-Cola Cake
==============

2 cups plain flour
2 cups sugar -> Mix together

1 cup Coca-Cola
2 sticks margarine
2 tablespoons cocoa -> Bring to a boil, add to flour mixture, blend well

Add and blend:
1/2 cup buttermilk
1 teaspoon baking soda
1 teaspoon vanilla
1/2 teaspoon salt
2 eggs

Then: Fold in 1 1/2 cups miniature marshmallows. Bake in oblong pan (9"x13")
at 325F for 30-35 minutes. Batter will be thin.

TOPPING:
- -------

1 stick margarine
7 tablespoons Coca-Cola
2 teaspoons cocoa -> Bring to boil then add 1 box confectioner's sugar
(xxx) and 1 cup chopped pecans

Pour over cake while mixture is hot. Do not start making topping until cake
is out of the oven.

You didn't mention whether it had to be light or not so......I found this one...sounds yummy!

(if you live fudge you will like this)

CAKE
:2 cups flour

1 cup Coca Cola

1 1/3 cup miniature marshmellows

ICING:
1/2 cup margarine
6 Tbsp. Coca-Cola
3 Tbsp. cocoa
1 lb. box powdered sugar
1 cup pecans, chopped

CAKE:Combine flour and sugar. Heat margarine and Coca-Cola to boiling point; pour over flour mixture. Mix well. Add buttermilk, eggs, soda, vanilla, cocoa, and marshmellows. Pour into greased cake pan.Bake at 350 degrees for 35 minutes.ICING:Combine margarine, Coca-Cola, and cocoa. Heat mixture, pour over powdered sugar. Use more or less powdered sugar as needed. Beat well. Ice cake while cake is still hot. Sprinkle chopped nuts over cake.

Hi Natasha. Actually, my birthday is in 6 days (yikes! 32!), but this is a wedding shower for a friend of mine. My friend who I am doing the shower with thinks I am making way too much but she isn't addicted to this bb, so she doesn't understand that I *have* to make a ton of stuff so I can share it with my bb friends! http://www.cookinglight.com/bbs/smile.gif

LOL. I know what you mean. People are sometimes surprised at how much I cook/bake for a party or just because, but there are so many tempting recipes out there (especially from CL and this board) that I really want to try as much as I can! Anyway, have a great party, and happy birthday in advance!

OK, here is the review-I used Sherry's first recipe (which is very similar to the one Mamasue posted). It is very rich and very chocolaty. But it is also gooey and not very party-friendly. Dh is doing backflips because we may have to leave it here!

What does coca-cola cake taste like?

Mightyh, I haven't made one in years, but coca cola cake tastes like a rich, light (as opposed to dark) chocolate cake. It needs some kind of topping, because those mini marshmallows float on the top of the batter and melt in, but leave their telltale signs. It was one of the first cakes I learned to bake from scratch, and it's a fun science experiment for kids (the batter kind of foams when you pour in the cola).
