I know I've read this tip on the board earlier, but I can't seem to hit it during my searches... How do I freeze the remaining chipotle chiles when I only use a few from the can?
Your help much appreciated,

I freeze them individually in ice cube trays with a little of the adobo sauce.

Susann's idea is good - I may try that one next time, but the way I did it was to just put them on a cookie sheet individually with a little bit of sauce, freeze them, and then transfer them to a little freezer bag. They're not stuck together that way, and I can pull them out one at a time. I just used a couple to make the Chipotle Chicken Stew from the December issue. That was a thumbs up recipe for us, my husband said it was a repeater. It was easy, too.

What I have done and still do is I take the remaining peppers and sauce and put them in a mini food processor and blend them up. Then I spoon them into a small ice cube tray, freeze and then pop out into a freezer bag. They take about 15 seconds to defrost in the microwave and still taste great!

there are so many things you can freeze in ice cube trays. I freeze pesto in individual serving sizes, I also freeze lemon and lime juice when I only need part for a recipe.

do they come out of the ice trays easily? That's always been my question. I usually cut up little pieces of tin foil and put them in their own packets and then dump all the packets in a freezer bag.

You are so right about ice cube trays. I use them to freeze leftover cranberry sauce as there are only two of us in the house. 2 cubes of cranberry sauce do us for dinner quite nicely.
