In Nov 2000 issue there is a section on cooking with clay-pot, including a recipe for "Vietnese Carmelized Pork" in a clay pot. I do not have any claypots; how would I cook this in a conventional oven??

You could easily just use a dutch oven or baking dish and cover it tightly with aluminum foil when you want to bake it. I broke my Chinese claypot about 7 years ago, never gotten to buy one, just use a dutch oven which is nothing else but a heavy casserole and it works.

If you happen to have a Romertopf, that would probably work really well.
