Any tips for storing fresh ginger root? How long does it keep? Should it be kept in plastic or loose? Can it be frozen with any luck? I doubt I'll use all in the package before it spoils. Any thoughts? http://www.cookinglight.com/bbs/confused.gif

I freeze mine in a ziploc bag. When I need some, I just grate it frozen. The texture is a little wetter than fresh, but it works.
I buy mine in open baskets or the like, so it's usually put in a bag of some sort to get it home. I used to store it in the plastic in the produce drawer of my fridge and it never lasted as long as I expected. Then I read something about storing fresh ginger and keeping it dry (eventually gets damp in the plastic bag). I moved it to the stand that holds my fruit and such on the counter. Then it shot out a green sprout. Into the garden. Now I keep it in a basket in the pantry or covered on the stand. Bottom line, treat it like a potato.

I saw this on a cooking show once and I swear it works. Store a partially used piece of fresh ginger in a jar covered with sherry in the fridge. It will keep almost indefinitely. I know I've kept it this way for about 6 months!!
